(Wagner SD)

1 cup peanut butter
3/4 cup sugar
1 tsp baking soda
1/2 tsp salt(optional)
1 tsp vanilla
1 egg

Preheat oven to 350 degrees.
In large bowl, mix peanut butter and sugar together until blended.

In small bowl, beat the egg lightly, then add in the baking soda, salt, vanilla, and the egg.
Next, mix together the egg mixture with the peanut butter mixture.

Grease the pans and roll the dough into 1 inch balls and place them 2 inches apart on the cookie sheet.

I did not add the salt and baking soda and my cookies were delicious. I recommend you flatten the cookies with your fork before baking.

These were really yummy. I couldn't stop eating the dough. It was good too. I didn't add salt and they could use to cook a little longer, mine were a little undercooked.

Good... But Salty! NEW
by: Diana

I used Skippy Peanut Butter - Creamy for this recipe. At first I was worried about the texture of how runny the batter was. But the when I included the remainder of the ingredients: (pre-blended) Egg, Vanilla, Salt and Baking Soda. Then mixture got a bit crumbly. So then I mixed it by hand and rolled up the cookie balls by hand. I didn't make the traditional marks (with a fork) that you see on top of Peanut Butter Cookies, because I thought they would crumble and fall apart under my fork.

After cooking them for 10 minutes, the tops had crowned up and split/cracked opened and the centers were still uncooked. So I took my spatula and flattened them down so the cracks would close back up while they sat on the hot pan for another 2 plus minutes. They were golden brown on top and bottom but the centers of the cookie were a bit uncooked for my taste. So, on the smaller second batch, I left them in the oven for 11 minutes and let them sit on the hot pan for another 4 minutes. This time they were cooked enough. But, when I tasted the cookies I thought they were way too salty and I love salty things. So I will try making them again, but next time without the salt.

They are very crumbly cookies and you might want to lean over your kitchen sink while eating them.
