Weight Watchers Vegetable Salad
- cauliflower
- broccoli
- carrots
- celery
- onions
Cut up in large bowl.
Dressing:
- 1/2 cup Weight Watchers salad dressing
- 1 c cup Weight Watchers plain yogurt
- 4 to 6 pkg. Equal
Mix dressing into vegetables 1 hour before serving. Add
bacon bits if desired.
Weight Watcher Recipe for Vegetable Dip
- 1 cup Weight Watchers mayo
- 3 tbsp. skim milk
- 2 tbsp. apple cider vinegar
- 1/8 tsp. oregano
- minced garlic
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/4 packet Sweet 'N Low
Blend well. Chill for 1 hour. Enjoy!
Weight Watcher Recipe For Pot Roast with Vegetables
- 2 pound bottom round or rump roast (trim the fat!!!!)
- 1 Oven Cooking Bag
- 2 medium potatoes (peeled and quartered)
- 1 green bell pepper - chopped
- 2 onions - thinly sliced
- 10 baby carrots
- 4 celery stalk - sliced
- 1 garlic clove - chopped
- 1 teaspoon dry mustard
- 1 teaspoon dry thyme
- 2 cups tomato juice
- 1 lemon - squeeze juice from lemon
- Place roast in shallow roasting pan. Trim and remove all fat. Squeeze lemon over roast and pierce with a fork. Preheat oven at 350 F.
- Place roast in oven cooking bag according to instructions on bag. Cut and peel potatoes and arrange them around roast. Also arrange carrots and onions around roast inside cooking bag. Put celery and bell pepper on top of roast. Sprinkle dry mustard, thyme and garlic over roast.
- Pour tomato juice around beef in bag. Seal bag and cut slits in bag for venting. Roast 1 hour at 350 F.
- Remove from bag and let stand 5 minutes. Cut into slices and enjoy. You will have natural gravy from the meat juices that will smother the vegetables for a delicious meal.
Almond Cloud Cookies
If you are comfortable using a pastry bag and tip, it will work like a charm for these cookies. Use a large star tip and pipe out 1 1/2-inch rosettes.
Ingredients
- 2 medium egg white(s)
- 1/4 tsp table salt
- 1/4 tsp ground cinnamon
- 1 cup sugar
- 1/2 cup almonds, blanched, finely ground
Preheat oven to 250 deg. F. Coat baking sheets with cooking spray; flour them lightly and shake off excess.
Beat egg whites, salt and cinnamon until soft peaks form. Continue to beat while gradually adding the sugar. Beat until stiff peaks form. Fold in almonds.
Drop batter by tablespoonfuls onto baking sheets. Bake about 1 1/2 hours until firm and dry.
Store in airtight containers.
This weight watcher recipe yields about 60 cookies.
Eggplant Sandwich
- 1/8 tsp table salt, or to taste
- 1/4 medium eggplant(s), about 2 slices, 1/2-inch thick each
- 1 tsp olive oil
- 1/2 tbsp balsamic vinegar
- 2 slice high-fiber bread, multigrain or sandwich roll
- 12 medium basil, leaves
- 1/2 cup canned pimento, or about 6 pieces roasted red pepper
Sprinkle salt on both sides of eggplant slices. Allow it to sit on a wire rack or in a colander for 20 to 30 minutes. This takes out extra moisture.
Preheat grill, grill pan or saut� pan. Brush eggplant slices with olive oil.
Grill or saut� eggplant slice until cooked but not mushy, about 1 to 2 minutes per side. Allow eggplant to cool, then drizzle balsamic vinegar on bread slices and assemble the sandwich: bread, eggplant, basil, red pepper, bread.
