Easy Thumbprint Cookie Recipes

Peanut Butter and Jam Thumbprint Cookies

  • 1 cup (250 ml) shortening
  • 1 cup (250 ml) peanut butter
  • 1 cup (250 ml) white sugar
  • 1 cup (250 ml) lightly packed brown sugar
  • 2 eggs
  • 2 1/4 cups (550 ml) white all purpose flour
  • 1 tsp. (10 ml) baking soda
  • 1/4 tsp. (1 ml) salt
  • 3/4 cup (175 ml) rasberry and strawberry jam
Cream shortening, peanut butter, sugar and eggs together thoroughly. Add flour, baking soda and salt. Mix well. Shape dough into 1-inch (25 cm) balls and place on ungreased baking sheets. Make indentations in center of each with thumb. Bake at 375 deg. F (190 C) for 15 minutes. Remove from oven, and press indentation in cookies, again while warm. Fill indentation with jam, using about 1/2 teaspoon (2 ml) for each cookie.

Coconut Thumbprint Cookie Recipe

  • 1/2 cup margarine
  • 1/2 cup sugar
  • 1 egg (separated)
  • 3/4 cup unsifted flour
  • 1 tsp. vanilla
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 2/3 cup flaked coconut
  • preserves of your choice
Cream margarine with sugar, egg yolk and vanilla. Combine flour with salt and baking powder. Add to creamed mixture and blend well. Form into balls approximately 1 inch in diameter. Beat egg white until slightly frothy. Dip dough balls into egg white, then roll in coconut. Place on greased baking sheet. Make shallow depression, using thumb, in center of each cookie. Spoon 1/2 teaspoon preserves into cookie. Bake a 365 degrees for 8-9 minutes or until coconut begins to brown. Cool on baking sheet for 1-2 minutes.

Thumbprint Cookie Recipe

  • 1/4 cup softened butter or margarine
  • 1/4 cup shortening
  • 1/4 cup packed brown sugar
  • 1 egg separated
  • 1/2 teaspoon vanilla
  • 1 cup all purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup nuts (finely chopped)
  • jelly of choice

Heat oven to 350 deg. F. Thoroughly mix butter, shortening, sugar, egg yolk and vanilla. Work in flour and salt until dough holds together. Shaped dough by teaspoonfuls into 1- inch balls.

Lightly beat egg white. Dip each ball into the egg white and then roll in the chopped nuts. Place the balls about 1 inch apart on an ungreased cookie sheet. Press your thumb deeply into the center of each ball. Bake for about 10 minutes or until lightly brown. Remove from cookie sheet immediately and allow to cool. Fill the thumbprints with jelly.

Jam Thumbprint Cookie Recipe

  • 3/4 cup softened butter or margarine
  • 1/2 cup sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup red raspberry, boysenberry, or currant jam
  • 1/2 cup chopped filberts
  • 1 teaspoon grated orange or lemon peel
  • 2 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup sugar

Cream butter and sugar. Add in eggs and vanilla and beat well. Stir flour with baking powder and salt and then stir into creamed mixture. Chill at least 1 hour. Shape into balls and place about 2 inches apart on a greased cookie sheet. Using your thumb make an indentation into the center of each ball. Mix jam, nuts and peel. Add about 1/2 teaspoon of jam mixture into each ball.

Beat egg whites with cream of tartar until soft peaks form. Gradually add 1/2 cup sugar and beat to stiff peaks. Pipe a wreath of meringue around jam atop each ball. Bake at 350 deg F. for 10 - 13 minutes.

Thumbprint Cookie Recipe

  • 1 cup soft shortening
  • 1/2 cup brown sugar
  • 2 egg yolks
  • 1 tsp. vanilla
  • 2 cups flour
  • 1/2 tsp. salt
  • 2 egg whites slightly beaten
  • 1 1/2 cups finely chopped nuts
Mix shortening, sugar, egg yolks and vanilla thoroughly. Sift flour and salt together; stir in. Cool and roll into balls. Dip in the egg whites and roll in nuts. Place on cookie sheet and bake at 375 deg. F. for 5 minutes. Remove from oven and press with thumb. Bake for 8 more minutes. Put colored icing in thumbprints.
