Taco egg

Heat olive oil in skillet, add 1 egg, break the yellow, then add salt and pepper.

Place gluten free corn tortilla in skillet next to egg flip a couple of times, egg should be done place your favorite cheese on shell, add the egg and fold over with spatula. Press down and flip over.

Remove and place on paper towel on a plate.

This is so good and it takes a little practice to get the shell the way like, the longer it fry's the crisper.
