Swedish Meatballs

This Swedish meatballs recipe will make about 40 small meatballs.

Ingredients:

2 lbs. ground beef
2 cups soft bread crumbs
2 3oz. pkg. of cream cheese
1/2 cup dry onion soup mix
1/2 tsp. salt
1/2 tsp. ground nutmeg
2 1/2 cups milk
2 tbsp. all purpose flour

In a bowl combine meat, bread crumbs, cheese, soup mix, salt, nutmeg and 1/2 cup of milk. Mix thoroughly.

Shape into about 40 small balls. In a large skillet, brown the meatballs lightly. Shake the skillet while cooking will keep the meatballs round.

Cover and cook 20-25 minutes or until done. Remove the meatballs and drain off excess fat leaving about 1/4 cup of fat in the skillet. Blend the flour into the fat and stir in all the remaining milk. Cook and stir until thick and bubbly. Return the meatballs to the skillet and cover and cook until thoroughly heated.

This Swedish meatball recipe will serve 10-12 people.

1/2 pound ground pork
1/2 pound ground veal
1 large onion (diced)
2-3 teaspoons flour
1 egg
1 cup milk or water
1 teaspoon salt
1 teaspoon pepper

Combine all ingredients in a bowl and mix well. Form into small round balls and fry in a greased skillet until dark brown.

3 pounds ground beef
2 slices dry bread
salt and pepper
1 egg

Sauce:

2 cups ketchup
1/2 cup vinegar
1/2 cup water
3/4 cup brown sugar
3/4 cup white sugar
2 teaspoons onion salt
1 teaspoon celery salt
1/2 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon allspice

Combine the ground beef, bread, salt, pepper, and egg. Make into small balls and brown in frying pan. Combine ingredients for the sauce, mix well and pour over the meatballs. Simmer for 1 to 2 hours.

1 1/2 pounds ground beef
1/2 ground pork
1 teaspoon salt
1 teaspoon pepper
1 teaspoon nutmeg
2 cans mushroom soup
1 1/2 cups water

Combine the ground beef, ground pork, salt, pepper, and nutmeg. Roll into balls about 1 inch in diameter and lightly brown in a skillet. Remove any grease and place into a roasting pan. Mix the soup and water and pour over the meatballs. Bake for 60 minutes at 225 degrees F.
