This has to be the best roast beef recipe ever and dead easy. Give it a try and don't knock the ingredients until you try it. I found it on the internet and it has become a family favourite. 1 nice pot roast..any size 1 package dried onion soup mix 1 can of pepsi potatoes carrots rutabagas or any other root vegetables (amount depends on the number of mouths to be fed) Place the roast in a crockpot, unbrowned. Sprinkle the onion soup mix over the roast. Pour a can of Pepsi over it and cook on low power for at least 10 hours. For the veggies, we parboil them for 10 minutes, drain them and add them to the pot about an hour before the roast is done. If the roast is fatty, you can skim off any fat before adding the vegetables. This makes the most amazing gravy and the most succulent pot roast ever. We've decided if you lined up 10 people and fed it to them, not one would be able to guess that it contains Pepsi. Perfect Roast Beef RecipeSubmitted by Maggie Sat, Feb 05, 2005Not sure if you take submissions, but this is the way I do roast beef and I thought you might be interested. 1 beef roast of any size Take roast out of refrigerator and let it sit until it is at room temperature. Preheat oven to 375 degrees Place roast, fat side up in pan and salt and pepper it well. I put garlic slivers in slits I have made in it, but you don't have to. Set timer for exactly 1 hour. When it rings, turn off oven and do NOT open the door for any reason. The roast can sit there as long as you want it to but about 45 minutes beofre serving, turn the oven back to 375 and bake for 30 minutes. Remove roast and wrap in foil to sit for about 15 minutes. It never fails to be medium rare. I've done this with tiny wee roasts and for Christmas, I did it with a rib roast the size of a small dinosaur's leg..Medium rare..Spot on.
