Individual Quiche Lorraine
Make the pie crust following the package directions. Divide into six pieces and on a lightly floured surface roll each portion into a 6 inch circle. Use each portion to line a 5 inch tart or muffin pan. Lightly brush each shell with egg white and refrigerate. Mix the onions soup mix with flour and add spinach, ham and 1 cup of cheese. Mix together well. In a separate bowl beat the whole egg, yolk, and cream. Divide the spinach mixture evenly between the six pastry shells and then add the rest of the cheese. Top with the egg mixture. Bake in a 350 degree F. preheated oven for about 1/2 hour or until the tops are a golden brown. Allow to cool slightly before serving.
Cheese and Mushroom Quiche Recipe
Bake the empty pie shell for 15 minutes at 450 deg. F. While shell is baking, melt the butter and fry the mushrooms for 5 minutes. Add the mushrooms and the cheese to the pastry shell. Beat the eggs while adding seasoning and cream. Heat the milk (don't boil) and add to the eggs and cream. Strain this mixture into the pastry shell and bake at 350 deg. F. for 30 minutes or until the mixture has set. Can be served hot or cold. This quiche recipe serves 4.
Quiche Lorraine With Corn
Mix the corn with the eggs, milk, cheese, and seasoning. Pour into the pastry shell and bake for 15 minutes at 450 deg. F. Lower heat to 375 deg. F. and continue baking for another 30 minutes. Garnish with parsley and tomato slices and serve hot or cold. This quiche recipe serves 4 to 6.
Individual Shrimp Quiche Recipe
Line muffin tins with pastry. Sprinkle with shrimp and green onion. Mix cheese, mayonnaise, eggs, milk and spices. Fill pastry shells 3/4 full with mixture. Top with a sprinkle of cheese. Bake at 400 deg. F. for 15 to 20 minutes. This quiche recipe makes about 2 dozen small quiches.

Quiche: Fry bacon until crisp and allow to drain on paper towels. Save the fat. Sprinkle 2/3 of the bacon and grated cheese in the bottom of the pastry shell. Beat the eggs, cream, salt, nutmeg, pepper, and oregano until it is smooth. Place in pastry shell. Bake in 375 deg. preheated oven for 30 minutes or until golden brown.Sauce: Saute the onion in the bacon fat until transparent. Add tomato, sugar, and thyme. Simmer while stirring until the mixture begins to thicken (about 15 minutes). Spread the tomato sauce over the top of the quiche. Cut strips of mozzarella cheese and arrange them like spokes on top of the tomato mixture. Sprinkle with the remaining bacon and garnish with the olives. Bake for an additional 5 minutes until the cheese begins to melt. Serve warm.
