Pumpkin Cookie Recipes

Pumpkin Cookies

• 1/2 cup margarine
• 1 cup brown sugar
• 1 cup white sugar
• 2 eggs
• 1 teaspoon vanilla
• 1 1/2 cups pumpkin
• 2 1/2 cups flour
• 3/4 teaspoon baking soda
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 3/4 teaspoon ginger
• 1 teaspoon cinnamon
• raisins

Preheat oven to 350 deg. F. Cream margarine with brown and white sugar. Beat in the eggs and vanilla. Add pumpkin, flour, baking soda, baking powder, salt, ginger, and cinnamon. Mix well. Roll dough and cut out cookies. Use the raisins to make faces on the cookies. Place on cookie sheet and bake for 15 to 20 minutes.
