Pumpkin Cookies

Ingredients and Instructions:

1 1/2 cups all-purpose flour
1 cup oatmeal
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
1/2 tsp. cloves
1 cup canned pumpkin
1/2 cup margarine
1 cup white sugar
1 egg
1 cup raisin

In a large bowl combine all of the above and mix well.

Drop by tablespoons on cookies sheet in oven at 375*F for 12 minutes.

Makes 5 dozen cookies.

Apple Pumpkin Cookies NEW

Here's another variation on the pumpkin cookie using apple instead of raisins. Make them at the same time as your pumpkin raisin cookie, and use up the rest of that can of pumpkin!

1 apple
1/2 cup canned pumpkin
3 teaspoons sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2/3 cup skim milk powder
1/2 teaspoon almond extract

Cinnamon topping - Mix together 1 teaspoon cinnamon and 4 teaspoons sugar.

Peel and core the apple, then grate the apple and add to all the other ingredients except the topping. Mix lightly, and drop by teaspoonfuls onto a baking sheet. Bake at 375 degrees F. for 20 minutes. Remove from oven and sprinkle with topping while still slightly warm.

Great Pumpkin Cookies NEW

I love pumpkin cookies and also love to bake them too. My daughter hasn't time to bake so I do it for her and she takes them to work and her friends rave about them. I work at the senior center and I bring containers of them for the Pool Players and they just devour them. Thanks for the great receipe. GERRY AXVIG
Walgreens has pumpkin on sale this week and I have to get some. .99 cents a can.
