Easy Pecan Pie Recipes

Pumpkin Pecan Pie Recipe

• 4 large eggs
• 1 16 oz. can solid-packed pumpkin
• 3/4 cup sugar
• 1/2 cup dark corn syrup
• 1 tsp. ground cinnamon
• 1/4 tsp. salt
• 1 cup pecan halves (left whole or chopped coarse)
• 1 unbaked 9 inch pie shell

Preheat your oven to 350 deg. F. In a large bowl lightly beat the 4 eggs. Stir in all the remaining ingredients except for the pecans. Stir until well blended. Pour the mixture into the pice shell and arrange the pecans on top.

Place in the preheated oven and bake for approximately 45 to 55 minutes until the filling is set and an inserted fork comes out clean. Allow to cool before serving.

Pecan Pie Recipe

• 1 unbaked 9 inch pie shell
• 1/3 cup butter
• 1/2 cup brown sugar firmly packed
• 1 cup corn syrup
• 1 tsp. vanilla
• 3 eggs, slightly beaten
• 1 cup chopped pecans

Cream the butter and slowly add the brown sugar, making sure that it's well blended and creamed. Blend in the corn syrup and vanilla. Add in the eggs and pecans.

Spoon into the pastry lined pan and spread evenly. Bake at 450 deg. F. for 10 minutes and then reduce the heat to 350 deg. F. and continue baking for another 25 minutes.

German Sweet Chocolate Pecan Pie Recipe

• 1 8 oz. pkg. cream cheese (softened)
• 1 1/2 cups cold half and half, light cream or milk
• 1 4 serving size pkg. Jello milk chocolate instant pudding
• 3 1/2 cup Cool Whip, thawed (8 oz. size)
• 1 4 oz. pkg. Baker's German sweet chocolate, chopped
• 1 cup honey-roasted pecans or plain pecans, chopped
• 1 Keebler ready-crust brand chocolate pie crust

Using an electric mixer on high speed, beat the cream cheese in a large bowl. Add the half and half and continue beating on slow speed until well blendeded.

Add instant pudding mix and continue beating for about a minute or until well blended. Now fold in the Cool Whip, chocolate and pecans. Spoon evenly into the pie crust and place into the freezer for about 6 hours until firm.

Remove from the freezer about 20 minutes before serving to allow the pie to soften. Store leftovers in the freezer.

Pecan Pie Recipes

• 3 eggs
• 2/3 cup sugar
• 1/3 teaspoon salt
• 1/3 cup melted butter
• 1 cup dark corn syrup
• 1 cup pecan halves

Beat the eggs until light. Add sugar, salt, butter, corn syrup and pecan halves. Add mixture to 9-inch pastry shell. Bake at 375 deg. F. for 40 to 45 minutes.

Perfect Pecan Pie

• 3 tablespoons margarine
• 5 egg yolks
• 1 cup sugar
• 1 cup white Karo syrup
• 1 cup broken pecan meats
• 5 egg whites, well beaten
• 1 teaspoon vanilla

Mix egg whites until well beaten. Fold the two mixtures together. Pour mixture into an unbaked pastry shell. Bake at 325 deg. F. for 1 hour or until custard-like in consistency. Serve with ice cream or whipped cream, if desired.
