Peanut Butter Cookie Recipes

Peanut Butter Balls

• 1 cup crunchy peanut butter
• 2 tablespoons butter
• fine coconut
• 1 cup icing sugar
• 1 cup Rice Krispies
• butter icing

Combine the peanut butter, icing sugar, and butter. Mix well. Mix in the Rice Krispies. Form into 1 inch balls. Roll in the butter icing. Roll in the coconut. Refrigerate before eating.

Chocolate Chip Peanut Butter Cookie Recipe

• 1 cup shortening
• 3/4 cup brown sugar
• 3/4 cup white sugar
• 2 eggs
• 1 cup chunky peanut butter
• 1/2 cup chocolate chips
• 2 cup sifted flour
• 1 1/2 teaspoon baking soda
• 1/4 teaspoon salt

Cream the shortening and peanut butter until light and fluffy. Add sugar and mix some more. Add the eggs, mix until light and fluffy. Add other ingredients and mix well. Roll into balls and drop on ungreased cookie sheet, flatten with a floured fork. Bake for 10 to 15 minutes at 350 deg. F.

Peanut Butter Cookie Recipe

• 1/2 cup margarine
• 1/2 cup peanut butter
• 1/2 cup sugar
• 1/2 cup brown sugar
• 1/2 teaspoon vanilla
• 1 egg
• 1 1/4 cup flour
• 1/2 teaspoon baking powder
• 3/4 teaspoon baking soda
• 1/4 teaspoon salt

Mix together the margarine, peanut butter, sugar, brown sugar, vanilla, peanut butter, and egg. Add the rest of the dry ingredients. Mix. Roll into balls and place on cookie sheet. Press flat with a floured fork. Bake 10 to 12 minutes at 350 deg. F.

Peanut Butter Fingers

• 2 cups icing sugar
• 2 cups peanut butter
• 4 tablespoons melted butter
• 2 cups raisins or 1 cup raisins and 1 cup dates
• 1 cup coconut (fine)
• 1 cup chopped nuts
• 1 cup rice krispies

Mix in the above order. Roll into small fingers and refrigerate for 2 hours.
Melt in double boiler 1 box of semi-sweet chocolate and 1 1/2 inch strip of para wax. Stir well. Dip finger cookies in chocolate. Place on wax paper and refrigerate. The cookies freeze well.

Good and Chewy Peanut Cookie Recipe

• 1/2 cup margarine
• 1 cup brown sugar
• 1 cup white sugar
• 2 teaspoon vanilla
• 2 eggs
• 2 cup flour
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• 1 cup raisins
• 1 cup oats
• 1 cup crushed corn flakes
• 1 cup chopped peanuts

Beat together the margarine, brown sugar, white sugar, vanilla, and eggs. Sift the flour, baking soda, and baking powder together and add to the other mixture. Add the raisins, oats, corn flakes and peanuts. Mix. The dough should be stiff. Drop from spoon onto greased cookie sheet. Flatten with fork dipped in flour. Bake for 15 minutes at 325 deg. f.
