Muffin RecipesA selection of muffin recipes.
Blueberry Bran Muffins
Mix bran, flour, sugar, baking powder, and baking soda together in a large bowl. Add eggs, buttermilk, vegetable oil, and molasses; mix just to moisten. DO NOT OVERMIX. Fold in the blueberries. Spoon into nonstick or paper lined muffin tins, filling almost to top. Bake at 375 deg. F. for 25 minutes. Remove from oven and let stand 2 minutes before removing from pan.
Bran Muffins
Cream the shortening and sugar together. Add eggs. Sift flour, salt, baking soda, and baking powder together. Add all-bran, molasses, buttermilk, milk and mix together. Add shortening and sugar. Add dates or raisins. Place in muffin tins. Bake for 18 minutes at 350 deg. F.
Banana Muffins
Preheat oven to 350 deg. F. Put bananas, sugar, egg in bowl and beat until smooth. Sift together dry ingredients and then add to banana mixture. Add butter. Mix slowly until blended. Fill greased muffin tins. Bake for 15 minutes.

Moist Mixture
Preheat oven to 350 deg. F. and prepare 12 muffin cups. Combine dry mixture in a bowl. In a medium bowl beat eggs lightly and stir in all ingredients of the moist misture. Add moist mixture to dry mixture all at once and stir just until dry indredients are moistened. Fill 12 prepared muffin cups completely full. Bake for 30 minutes.
Orange Chocolate Chip Muffins
In a blender, blend the orange and orange juice (liquify). Add butter, sugar, and egg (liquify). Put in a bowl and add chocolate chips. Add flour, soda and powder. Mix lightly.
