Moist Banana Cake

Ingredients:

1 cup mayonnaise
2 large bananas
3/4 cup sugar
2 cups flour
1/2 tsp baking soda
1 tsp baking powder

Topping:
Cinnamon & Brown Sugar


Instructions
Beat all the ingredients together place in a round cake form which the bottom drops with the cake for easy removal. Before you place in the oven mix cinnamon and brown sugar together in a small bowl sprinkle over the cake then bake at 350 (F) for 60 min. Cool completely before cutting. Serve with ice cream...

You can also mix chocolate chips or walnuts or both items in the batter before you place the batter in the cake form.

Banana Nut Loaf

This banana nut loaf recipe makes one loaf.

Ingredients:

2 cups sifted flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
3 tbsp. instant dry milk
1/3 cup shortening
2/3 cup sugar
1 egg
1/3 cup water
1 tsp. vinegar
1 cup mashed bananas
1/2 cup chopped nuts

Pre-heat oven to 350F.
Grease a 9x5x3 inch pan well. Mix the shortening, sugar, egg, water, vinegar and bananas until light and fluffy.

Add dry ingredients all at once, mixing quickly but thoroughly.

Stir in 1/2 cup chopped nuts.
Put in pan.

Bake approximately 1 hour or until bread pulls away from sides of pan.

Let stand in pan for 10 mins. before turning on wire rack to cool.
