Mommie's Yummy Turkey Soup

Ingredients and Instructions:
6 Cups of Homemade Turkey Stock (see below)
2 cups leftover turkey meat
2 Carrots - chopped
3 Celery stalks - chopped
1 Large onion
4-5 garlic cloves - minced
2 large potatoes diced
1 cup Egg noodles or rice(uncooked)
dab of butter/margarine
Parsley
Garlic powder
Salt & Pepper
To make the stock you will need:
1 large onion - chopped
1 box (32 oz) of turkey stock + 1 14 1/2 oz. can of chicken stock.
ANY leftover meat/bones from turkey (I used the neck bone with meat, heart, plenty of dark meat from the carcass & the drumsticks).
5 Garlic cloves - crushed
2 Stalks of celery with leaves
Any leftover gravy and/or drippings from turkey.
Salt, pepper & garlic powder
Dash of paprika
Heat the broth/stock until hot. Add all ingredients (make sure to leave skin on drumsticks, it adds a TON of flavor).
Season well with salt, pepper, garlic powder & paprika.
Bring to a boil then, reduce heat to a simmer & cover. Simmer for 2 or 3 hours, skimming any foam that rises to the top of the pot.
Refrigerate until cool. Remove from refrigerator & skim all solidified fat from top.
Return the rich stock to the pot & heat. Add the carrots, onion, potatoes, garlic, and celery. Bring to a boil, reduce heat, cover & simmer for about 45 minutes. Add noodles & turkey and increase heat to medium. Heat for about 15 minutes & serve with some crusty bread! Yum!
