Mandarin Orange Cake

Ingredients and Instructions:

Cake:

1- boxed butter cake mix
1- large can mandarin oranges juice and all
4 eggs
1/2 cup oil

Mix all ingredients with mixer until orange segments are cut up. Bake at 350 for 25 to 30 minutes.

Topping:

1- large tub whipped topping
1- large box instant vanilla pudding
1- medium can crushed pineapple

Mix together and spread on top of cake.

Cool in fridge for one hour, then serve. Makes a great summertime cake because it is light and refreshing.

Zucchini Orange Cake

1 cup sugar
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cups chopped nuts
1 cup grated, drained zucchini
1/2 cup thawed orange juice concentrate
4 tablespoons vegetable oil
2 egg whites
1 1/2 teaspoon orange zest

Combine sugar, flour, baking soda, baking powder, cinnamon and salt. Add nuts and zucchini.

In a separate bowl combine the egg whites, orange juice, orange zest, and oil, and beat lightly. Fold into the dry mixture.

Pour into a floured 9x13 inch baking pan and bake at 350 degrees F. for 40-45 minutes. Test with toothpick. Ice with thin orange butter icing.

Orange Chiffon Cake

1 1/2 cups flour
1 1/2 cups sugar
3 tablespoons baking powder
1 teaspoon salt
1/2 cup salad oil
7 large egg (separated)
3/4 cup cold water
1 teaspoon vanilla
2 tablespoon orange zest
1/2 teaspoon cream of tartar

Sift the flour, sugar, baking powder, and salt together. Add the salad oil, 7 egg yolks, cold water, vanilla, and orange zest and beat well.

In a separate large bowl, beat 7 egg whites and cream of tartar until stiff. Add the egg yolk mixture and gently fold together.

Turn mixture into a tube pan and bake at 325 degrees F. for 55 minutes. Raise oven temperature to 350 degrees F. for an additional 10-15 minutes. Cool upside down on a baker's rack.

this is a wonderful cake. it is so easy to make and doesn't require alot of supplies. i will be making this one again.
