More Instructions For Maggie's Recipe For Steamed Cranberry Pudding

Hi Maggie...have you had a chance to look at any of the recipes in our private collection yet? We're about to add your recipe to our website and were wondering about a couple of things. How much headspace is needed for the pudding to rise? Could a double boiler be used for this dessert?

Cheryl say's it's similar to a plum pudding with caramel sauce her Mom used to make at Christmas. We're going to have to see if we can find that one too.

Hi Ken and Cheryl..

The recipes are just wonderful! Thanks so much for sending them. You can bet I will be trying loads of them! Especially now. My husband had a big operation, was in hospital for some time, hated the food there and came out skinny as a rail and losing over 2 stone. I am fattening the man up and cooking up a storm. As to the pudding, I usually put the batter in a small Pyrex dish. It rises maybe 2/3 inches and what I do is cover the bowl with foil which I have buttered a little bit on the inside. The pudding doesn't stick when it rises then.

I cover the pan it is boiling away in with a lid.. The original recipe from my mother and grandmother didn't call for this but to my way of thinking, the foil keeps the steam from making the pudding soggy.

I never tried a double boiler and I think its the steam rising around the dish the batter is in that causes it to rise.The recipe doubles beautifully..just use a bigger container.

I've used everything from a big covered roaster with the bowl sitting on a jar lid so as to not be right on the heat to a crock pot.. Direct stove top works best.

Cheryl is probably right..we think this pudding came from my great gran who lived in the borders here in Scotland, got carried across and adapted to the local thing..cranberries. I'd love to try the caramel sauce one! Thanks again for all the wonderful recipes. I've forwarded the site to my 2 daughters, one was married in June and one was married in October. (My big project for their bridal showers was a family cookbook with recipes they grew up with, plus ones from family all over the world. A true labour of love, but well worth the effort..They call it their kitchen bible..lol.) Now they can use some of your great recipes too!
