Meat loaf

  • 1 1/2 lbs ground beef
  • 1 1/2 lbs ground pork
  • 3 eggs
  • 1/2 tsp garlic salt
  • 1/4 tsp black pepper
  • 1/4 tsp thyme
  • 1/4 tsp ground sage
  • 1 tbs Worcestershire sauce
  • 1 tbs sherry
  • 1/2 cup minced scallions
  • 5 oz. sharp cheddar cheese, (grated)

Preheat oven to 350 degrees F. Beat eggs and add seasonings, Worcestershire, and sherry. Beat well. Add meat and blend well, then mix in scallions and cheese, mixing well. Place in an oiled meat loaf pan and bake for 45 minutes. Let cool for 5 minutes before serving.

Cheese and Broccoli Casserole

  • 1 (10 ounce) can condensed cream of mushroom soup
  • 1 cup mayonnaise
  • 1 egg, beaten
  • 1/4 cup chopped onion (optional)
  • 3 (10 ounce) packages frozen chopped broccoli
  • 1 small jar chopped pimento
  • 8 ounces shredded sharp cheddar cheese
  • salt and pepper to taste
  • 2 pinches paprika

Preheat oven to 350 degrees. Butter a 13x9x2 inch baking dish. In a medium mixing bowl, whisk together condensed soup, mayonnaise, beaten egg, and, if desired, chopped onion. Place frozen broccoli in a very large mixing bowl and break up the pieces. Pour soup-mayonnaise mixture on top of broccoli and mix well. Add pimento and cheese, mix well. Pour mixture into prepared baking dish and smooth top of casserole using a spatula. Sprinkle lightly with paprika plus salt and pepper if desired. Bake at 350 degrees for 45 minutes to 1 hour. Serve hot.

This low carb recipe serves 6-8

Chicken Cordon Bleu

  • 4 boneless chicken breasts (skinned)
  • 8 thin slices of ham
  • 4 oz Bleu or Swiss Cheese
  • 1 tablespoon melted butter
  • 1 large egg; beaten
  • 3/4 cup Parmesan cheese

Flatten chicken breasts to about 1/3" thick. Place ham on breast and cover with about 1/2 oz of bleu or swiss cheese. Roll up and secure with a toothpick. Dip each roll into a mixture of the melted butter and egg. Roll in Parmesan cheese and place in buttered baking dish. Bake at 350ºF for 30 to 35 minutes or until browned and tender.

This low carb recipe serves 4 with less than 1 gram per serving.

French Oyster Soup ( low carb recipes )

  • 1 qt. oysters and their liquor
  • 1 cup cold water
  • 1 qt. cream
  • 1 slice of onion
  • 3 tablespoon butter
  • 3 tablespoon flour or cornstarch
  • 2 egg yolks, beaten
  • Salt and cayenne to taste
  • blade of mace

Drain oysters, reserving liquor. Rinse with cup of cold water through sieve and reserve this water also. Combine with liquor. Chop oysters into uniform, rather small pieces. Scald cream over low heat with onion and mace. Set aside and let stand 15 min. Melt butter in heavy saucepan and add flour. Blend but do not brown. Remove onion and mace from cream. Slowly stir cream into flour mixture. Cook over low heat, stirring constantly, until smooth and slightly thickened. Add oyster liquor and cook 5 min. Add a few spoonfuls of hot cream to beaten yolks. Blend. Pour slowly into soup and cook 3 to 4 min. Add the oysters and cook 5 min longer. Season to taste with salt and cayenne.

German Style Chicken Wings (low carb recipes )

  • 2 pounds chicken wings, cut into 2 pieces at joint, tips discarded
  • 4 tablespoons margarine (don't use butter, it will burn)
  • 2 tablespoons hot pepper sauce
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1teaspoon brown sugar twin
  • 1 tablespoon lowcarb ketchup

Melt margarine in a small skillet and add spices. Put the sauce in a plastic bag and add wings. Shake, until all wings are covered with sauce, then place on a grill pan and bake for 1/2 hour at 350F.
