Spaghetti Casserolesubmitted Jan. 17, 2004 ( hamburger recipes )
This is one of our family favorites, it's just a mix of whatever you've got on hand. Ingredients
1 onion chopped Tools
fry pan or skillet InstructionsBoil the water and cook spaghetti according to directions. Be sure to break spaghetti in half before cooking. When done, strain, and place in roaster. Heat the frying pan and saute the onion, peppers, and mushrooms. When they are done throw them in the roaster. Fry the moose burger and dump on top of vegetables and spaghetti. If you use beef burger or anything with fat, remember to drain the fat. Put in all the other ingredients except for the cheese. Mix well. Add one half of the cheese and mix well again. Cover the top of the mixture with the remaining cheese. Cover and cook in the oven for 40 - 45 minutes at 350 deg. F. Add a Ceasar salad and garlic bread and you're in business. A word of caution...this hamburger recipe makes lots. Three of us ate all we could eat and there was lots left. That suits me fine, 'cause I think left over spaghetti is one of my favorites. It could easily feed 6 to 8 people. Hamburger Skillet
1 pound lean hamburger
In a skillet, brown hamburger. Drain. Top meat with salsa, undrained beans, uncooked rice, water and green peppers. Cover and simmer stirring occasionally for 20 minutes. Top with cheese, cover and heat until cheese melts, about 3 minutes longer. Top each serving with 1/4 cup corn chips. Hamburger Tomato Casserole
1 pound hamburger
Mix hamburger with chopped onion. Season to taste with salt and pepper. Place in layers in greased casserole with sliced potatoes. Pour soup, undiluted over all. Bake in moderate oven, 350 degrees F. for 45 minutes or until done. Spicy Stuffed Peppers
6 large green peppers Saute hamburger until meat is browned. Drain. Add tomato puree, onions, raisins, tomatoes, sherry, brown sugar, vinegar, garlic, salt, cinnamon and cloves. Cook over moderate heat for 15 - 20 minutes until most of the liquid has evaporated. Cool for 10 minutes, then add the rice. Cut the tops from the green peppers and discard the seeds and ribs. Steam peppers, cut side down, on a rack in pot of 1 inch boiling water, covered, for 10 minutes. Arrange the peppers, cut side up, in a buttered baking dish just large enough to hold them. Sprinkle with salt and pepper and fill with hamburger mixture.
Place a large piece of Monterey Jack cheese on each pepper. Bake peppers with a piece of foil loosely covering the dish. Bake for 20 minutes at 375 degress F. Poorboy Stroganoff
6 tablespoons butter
Melt butter in a skillet, add hamburger, garlic salt, salt, oregano and pepper. Brown lightly, add celery, onion, green pepper and mushrooms. Saute until the onions and celery are transparent, then add the tomatoes. Reduce heat, cover pan and simmer 20 minutes, until flavors have blended. Stir sour cream into the mixture just before serving. Cook noodles, following package directions. Serve stroganoff over noodles. Zucchini Beef Casserole
1 pound hamburger
Brown hamburger and onion in hot oil. Add rice and seasoning and stir a few minutes. Pour off fat. Layer in an casserole dish, half of the zucchini, all the hamburger mixture, cottage cheese, and the rest of the zucchini. Top with mushroom soup and cheese.
