Good O Sweet Potato Pie

Ingredients and Instructions:
2 cups sweet potatoes (baked)
1 stick unsalted butter
1 1/3 cup brown sugar
1 1/3 cup white sugar
1 1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon pure vanilla extract
1/4 cup all purpose flour
1/2 cup heavy whipping cream
2 eggs
2 frozen 9 inch deep dish pie shells
Directions:
Preheat oven to 350 degrees.
Place uncooked sweet potatoes in the oven uncovered on a cookie sheet. Bake for about 1 hour or until soft when poked with fork.
Cool potatoes for about 30 minutes.
Scoop out potatoes from skin and place in mixing bowl. Add the stick of butter. Mix until well blended.
Add brown sugar, white sugar. Mix well.
Add cinnamon, nutmeg, vanilla. Mix well.
Add flour. Blend well.
Add eggs. Blend well.
Add whipping cream. Blend well.
Pour pie filling into two pie shells.
Bake in 350 degree oven for 1 hour and 20 minutes or to personal preference.
Let cool for 1 hour.
