Spiced Pumpkin Cake with Crumb Topping

Cake:

  • 1 stick unsalted butter, softened
  • 1 bag Gluten Free Pantry Nice ‘n’ Spicy Cake Mix
  • 1 cup canned squash or pumpkin
  • ½ cup milk
  • 2 large eggs, slightly beaten
  • ½ cup toasted chopped pecans or walnuts
Preheat oven to 350 degrees. Oil a 9-x-13-inch pan. Beat softened butter until fluffy. Add cake mix and beat until mixture is crumbly.
Combine eggs and milk and beat into cake mixture.
Fold in squash and nuts.
Spread into prepared pan.

Topping:

  • 1 bag Gluten Free Pantry Crisp and Crumble Topping
  • 5 Tbs. unsalted butter, melted
  • ½ cup toasted chopped pecans or walnuts
Combine topping ingredients and crumble over batter.
Bake 23-25 minutes.
This gluten free recipe serves 12.

Tex-Mex Pasta Salad

  • 1, 10-oz. package gluten free fusilli or elbow rice pasta, cooked, drained, and rinsed in cold water
  • 1, 14.5-oz. can black beans, rinsed and drained
  • 1 cup frozen corn kernels, thawed
  • 1 red bell pepper, seeded and chopped
  • 3 green onions, chopped
  • 1 cup cubed cooked chicken, optional
  • 1 cup medium-spiced salsa (check labels)
  • ½ cup plain yogurt or low-fat sour cream (check labels)
  • 3 Tablespoons gluten free mayonnaise
  • 2 teaspoons ground cumin
  • Salt and pepper to taste
  1. Combine drained pasta, black beans, corn, pepper, green onions, and chicken, if used.
  2. In a separate bowl, combine salsa, yogurt or sour cream, mayonnaise, cumin and salt and pepper.
  3. Pour over pasta mixture and stir to blend.
  4. Refrigerate until ready to serve.
This gluten free recipe serves 8

Creamy Potato Cauliflower Soup

  • 1 1/2 cups diced peeled potatoes
  • 2 small celery sticks, diced
  • 1 small onion, minced
  • 1 1/2 cups water
  • 1 tsp. salt
Cook above ingredients until tender. Mash (do not drain).
Add: 1 1/2 cups cauliflower in small florets, steamed for 5 min.
Prepare white sauce as follows:
  • 2 Tbs. butter
  • 2 Tbs. cornstarch
  • 1 1/2 cups milk or milk substitute
Bring ingredients to a boil and stir continuously until mixture thickens.
Fold into soup. Garnish with parsley and serve.

This gluten free recipe serves 4.

Gluten Free Meat Loaf

  • 1 1/2 lb. ground beef
  • 1 egg, beaten
  • 1 cup gluten free bread crumbs
  • 1 medium onion, chopped
  • 1 1/4 tsp. salt
  • 1 1/4 tsp. pepper
  • 1/2 (8 oz.) can tomato sauce

Sauce:

  • 1/2 (8 oz.) can tomato sauce
  • 2 Tbsp. gluten free vinegar
  • 2 Tbsp. gluten free prepared mustard
  • 1 cup water
  • 2 Tbsp. brown sugar or molasses
Combine the ingredients for the meat loaf. Place into a loaf pan or dish. Bake at 350 degrees. While this is baking, combine the ingredients for the sauce. Pour sauce over meat loaf and continue baking for 1 1/2 hours, basting occasionally.

This gluten free recipe serves 4 to 6.

Gluten Free Vegetable Pizza

  • gluten free pizza crust (any size)
  • gluten free Thousand Island dressing
  • vegetables (carrots, mushrooms, green pepper, broccoli and any other you choose)
  • Mozzarella cheese, shredded
On the pizza crust, spread a layer of dressing. Layer the vegetables in any order. Top with the Mozzarella cheese. Bake in 300 degrees oven until crust is golden.
This gluten free recipe would make a great lunch even for the kids.
