Goulash Soup
Melt butter or margarine and fry the onions until they are transparent. Add the green peppers and tomato paste. Cover and simmer for 10 minutes. Add the meat and remaining ingredients and simmer for 1 1/2 hours, until the meat is tender. Add cubed potatoes if desired and simmer until potatoes are done.
Schweinekarre in Pfefferlingssosse (Pork in Pepper Sauce)
Place the boned pork flat and season lightly if desired. Combine the apple, prunes, bread crumbs, paprika, cinnamon, and egg. Add enough milk to give it a sticky consistency. If the pork is very lean 2 teaspoons of butter can be added to the stuffing. Place the stuffing in the center of the pork and make a roll, securing by tying or with skewers. Place the roll in a roasting pan and brush lightly with oil. Roast at 425 degrees F. for 45 minutes, then reduce heat to 400 degrees F. and cook for 1 3/4 hours more. Prepare the sauce while the meat is cooking. Melt the butter and saute the onions until tender. Stir in flour, paprika, and cayenne. Blend in the stock and bring to a boil. Cook until thickened and season well. Serve with spaghetti.
Fish with Tomato and Bacon
Fry the bacon for a few minutes, then add the sherry. Divide the fish into 4 or 5 portions and season with salt, pepper, and paprika. Place on top of the bacon. Add the onion and tomatoes. Blend the cream with the ketchup and add to the fish. Cover the pan and simmer very gently for 12-15 minutes. Do not cook too quickly or the cream will curdle. Place the fish and bacon on a serving platter without breaking the fillets. Pour the sauce, onions, and tomatoes over the fish and garnish with parsley and paprika. Serve with rice or potatoes.
Bavarian Veal with Asparagus
Brown the veal in hot oil using a Dutch oven. Add onion and carrots and cook until the onion is transparent. Stir in the parsley. In a bowl mix the lemon juice, broth, flour, and seasonings. Blend well. Pour over the meat. Cover and bake in a pre-heated 325 degree F. oven for 90 minutes until the meat is tender. Add more broth if needed.Cook the asparagus until just tender, stir into veal and serve.
Brotpuding (bread pudding)
Place the crumbled rolls in a bowl. Heat half the milk and pour over the crumbs and allow to stand for about 30 minutes. Mix in the cinnamon. Grease a baking dish and spoon in a layer of crumb mixture. Add a layer of almonds, dried fruit, and lemon rind. Add a second layer of crumbs and a second layer of almonds and fruit. Finish with a final layer of crumbs. Heat the remaining milk. Beat the sugar into the eggs and then add the heated milk. Strain over the bread mixture. Bake at 325 degrees F. for about 90 minutes until the pudding is firm to the touch. To serve pour the red wine over the the pudding and top with icing sugar. Serve immediately.
