Fried Chicken Recipes

My moms fried chicken recipe was what I wanted each year for my birthday dinner and is still my favorite food. Here are several different recipes for fried chicken done in a skillet or in the oven with gravy.

Crispy Fried Chicken

1 cup milk
3 tablespoons orange juice
1 cut up frying chicken (4 pounds)
1 cup flour
1 cup yellow cornmeal
1 teaspoon salt
1 teaspoon pepper
4 cups cooking oil

Soak chicken in a large bowl with the milk and orange juice for 1/2 hour. Place the flour, cornmeal, salt, and pepper in a paper bag and shake to mix.

Shake the chicken one piece at a time in the flour mixture to coat. Using a large skillet, heat 2 inches of oil to 350 degrees F. Fry the chicken on all sides until golden brown and fully cooked. Place the cooked chicken on paper towels to drain
This fried chicken recipe will serve 5-6.

Crunchy Fried Chicken

1 quart vegetable oil
1/2 cup flour
1/2 cup yellow cornmeal
1/2 teaspoon salt
1/4 teaspoon baking powder
3 pounds chicken (8 pieces)
1 egg
1/3 cup milk

Using a large, deep, skillet, heat the oil to 375 degrees F. Combine the flour, cornmeal, salt and baking powder in a brown paper bag. Wash chicken and pat dry. In a shallow pan beat the egg with the milk.

Dip the chicken pieces into the egg mixture one at a time and then drop into the bag of flour mixture. Close the bag and shake to coat the chicken. Fry the coated chicken pieces until well browned on all sides, turning occasionally. When the chicken is done place the pieces on paper towel to drain.
This fried chicken recipe will serve 4.

Fried Chicken with Cream Gravy

1 pound vegetable shortening
1/2 pound lard
2/3 cup flour
1 teaspoon salt
1/4 teaspoon pepper
3 pounds chicken (cut into 8 pieces)
1 1/2 cups milk or cream

In a large, deep, skillet melt the shortening and lard. Combine the flour, salt and pepper in a brown paper bag. Wash and dry the chicken. Dip the chicken pieces one at a time into a bowl of milk. Drop the chicken pieces one at a time into the flour mixture, close the bag and shake to coat the chicken.

Save 1 tablespoon of flour for the gravy. Fry the chicken in the hot fat until well browned on all sides, turning frequently. When the chicken is done place on paper towels to drain. Transfer to plate and keep warm. To make the gravy pour off all but 1 tablespoon of the fat from the skillet. Blend in 1 tablespoon of the saved flour mixture and stir over a medium heat until golden.

Scrape any chicken bits loose from the pan. Gradually stir in milk left over from dipping the chicken. Cook the gravy until thickened stirring constantly. Add seasoning if neccessary. Place the gravy in a bowl to serve with the chicken.
This fried chicken recipe will serve 4.

Oven Fried Chicken

1 1/2 cups cornflake crumbs
1 teaspoon poultry seasoning
1 teaspoon paprika
1/2 teaspoon garlic salt
1/8 teaspoon pepper
1 large egg
1 tablespoon water
3 pounds chicken (cut into 8 pieces)
nonstick cooking spray

Combine cornflake crumbs, poultry seasoning, paprika, garlic salt and pepper and place on a sheet of waxed paper. In a shallow dish, beat the egg with the water. Wash and pat dry the chicken pieces. Dip the chicken into the egg mixture and coat evenly in the crumb mixture.

Place the chicken in a shallow pan sprayed with nonstick cooking spray. Bake in a preheated 400 degree F. oven for 30 minutes, or until chicken is tender when stabbed with a fork or nicely browned.
This fried chicken recipe will serve 4.

Oven-fried Chicken with Gravy

2/3 cup flour
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dry mustard
1/2 teaspoon celery salt
1 teaspoon paprika
3 1/2 pounds chicken pieces
1/2 cup margarine

Combine the flour, salt, pepper, dry mustard, celery salt, and paprika in a brown paper bag. Wash and dry the chicken pieces. Shake the chicken pieces one at a time in the flour mixture. Melt the margarine in a shallow baking dish, large enough to hold the chicken in one layer. Arrange the chicken pieces in the dish and turn them once to coat both sides in the butter. Bake at 375 degrees F. uncovered, for 75 minutes turning once.

Remove the chicken to a preheated serving platter. Place the roasting pan over a low heat and add 4 tablespoons of flour to the chicken drippings and butter. Scrape the the sediment from the bottom and blend thoroughly. Stir in two cups of hot water and keep stirring until the gravy thickens. Serve with mashed potatoes.
This fried chicken recipe serves 4.
