For the Love of Brownies

In top of double boiler, melt and combine:
* 4 oz. bittersweet chocolate
* 1/4 c. margarine
* 2 Tb. strong brewed coffee

In medium bowl, beat together:
* 1 c. firmly packed light brown sugar
* 1 c. granulated sugar
* 4 eggs
* 1/4 t. salt

After it has cooled, add chocolate mixture to bowl.

Stir together in measuring cup:
* 3/4 c. flour
* 1/4 c. unsweetened cocoa powder

Fold in:
* 1 c. semisweet chocolate chips

Bake in greased and floured 13 by 9 inch baking pan for 25 to 30 minutes at 325 F, or until knife insert comes out clean.

Best Chocolate Fudge Brownies NEW

Chocolate lovers - here's your Brownie recipe complete with icing!!!! You can add in nuts, or not, whatever kind you choose - pecans or walnuts will each impart a slightly different flavour.

2/3 cup butter
1 1/2 cup sugar
1/4 cup water
2 cups semi-sweet chocolate chips
2 teaspoons vanilla
4 eggs
1 1/2 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped nuts

Combine butter, sugar and water in a small pot and bring just to a boil. Remove from heat and add chocolate and vanilla, stirring until the mixture is blended. Transfer to a large bowl.

Beat the eggs together in a small bowl and transfer to the chocolate mixture. Gradually blend in the flour, baking soda and salt. Stir in the nuts if you are using them.

Pour into greased 13x9x2 baking dish, bake in pre-heated 325 degree F. oven for about 50 minutes. Cool before icing and cutting.

Fudge Frosting: Sift 2 cups icing sugar together with 1/4 cup cocoa, and add 1/8 teaspoon salt into bowl. Heat 1/4 cup evaporated milk together with 2 tablespoons butter until just melted. Add the milk/butter mixture to the sugar and beat until smooth, adding 1 teaspoon vanilla at the finish. If too thin, add more icing sugar. Spread on cooled brownie.
