White Fish Recipes

Baked White Fish With Sour Cream

  • 3 pounds fresh or frozen white fish
  • butter
  • salt
  • pepper
  • 1/2 cup parmesan cheese
  • 4 strips of bacon
  • 1 teaspoon lemon juice
  • 1 cup sour cream
  • 1/3 cup buttered bread crumbs
  • chopped parsley

Rub fish with butter, salt and pepper. Lay bacon on bottom of baking pan and place fish of top. Make a mixture of sour cream, cheese, crumbs and lemon juice. Spread over the fish. Bake at 350 degrees F. until tender (20 to 30 minutes). Serve sprinkled with grated cheese and parsley.
This fish recipe will serve 6 to 8.

Lemony Stuffed Fillets

  • 2 pounds fresh or frozen fillets
  • 1/4 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped celery
  • 2 tablespoons butter
  • 2 cups bread cubes
  • 1 teaspoon grated lemon rind
  • 1 teaspoon parsley flakes
  • seasoning
  • 1 tablespoon melted butter
  • snipped chives

Arrange half the fillets in a greased casserole dish. Saute onion, green pepper, and celery in butter until tender. Stir in bread, lemon rind, parsley flakes, and seasoning. Mix well. Spoon the stuffing over the fillets, and top with remaining fillets. Brush with melted butter and sprinkle with chives. Cover and bake at 450 degrees F. allowing 10 minutes per inch of thickness. Uncover during the last 5 to 7 minutes of cooking. Garnish with parsley and lemon slices.
This fish recipe will serve 4 to 6.

Fish Fillets With Lemon and Dill

  • 4 medium, white mild-tasting fish fillets
  • 3 tablespoons flour
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt
  • 2 tablespoon butter
  • 1 tablespoon oil
  • 2 teaspoon lemon juice
  • 1/2 teaspoon grated lemon peel
  • 1/2 teaspoon dill

Stir together the flour, pepper, and salt and lightly coat each fish fillet. Heat the butter and oil in a skillet over medium heat and saute the fillets for 10 minutes per inch of thickness (about 2 minutes per side) or until the fish flakes easily with a fork. Remove the fillets to a warm plate. Stir the lemon juice, lemon peel, and dill into the skillet and simmer while stirring over medium heat for 1-2 minutes. Drizzle over fish and serve immediately.
