Ethnic Recipes

This section contains our collection of International and Ethnic recipes. Some of these recipes have been sent in by our visitors from all parts of the world.

This recipe for crepes was sent in by Kylie Bartlett of Launceston, Tasmania in Australia.She says, "I love crepes for a light family breakfast on the weekend but have had MANY disaters until I found this fool proof recipe. It makes about 5 or 6 crepes."

Ingredients:

15g butter melted
50g rice flour
1 Tbsp castor Sugar
100ml milk
2 eggs separated

Mix butter, rice flour, sugar, milk and egg yolks. In separate bowl, beat egg whites with an electric mixer until peaks are just formed. Fold egg whites into crepe mixture.Cook in a non stick frypan on medium heat.Keep warm in oven until ready to serve.

Toppings can be:

caremalized bananas
lemon and sugar
Poached apple and rhubarb
mixed berries
stewed apricots
diced mango

*These can be cooked with a tablespoon of sugar free jam to sweeten or add water or juice.
* top pancakes with fruit and then natural yoghurt for a heartier breakfast.

Ethnic Communities in North America

The Ethnic Recipes section has been included to provide a few ethnic recipes that are unique to their specific regions. Hopefully, the opportunity to enjoy the wide range of ethnic foods from some of our International neighbours can give us a little more insight into the customs and traditions of the diverse ethnic groups that we now find in many of our communities in North America. By gaining this insight maybe we can learn to be a little more tolerant of some of the customs that we sometimes may find a little strange.

Although we haven't included every ethnic group in this collection, we have tried to include the groups that have the largest populations in North America and so represent the types of ethnic foods that we will most likely find in our neighbours homes and kitchens.
