Deviled Egg Recipe
- 6 hard boiled eggs
- 1/2 teaspoon salt
- 1/2 teaspoon dry mustard
- 1/4 teaspoon pepper
- 3 tablespoons salad dressing, vinegar or light cream
Cut peeled eggs lengthwise in half. Carefully remove yolks and mash with a fork. Mix in seasonings and salad dressing. Fill whites with egg yolk mixture, heaping it up highly.
Variations:
Ketchup Flavored Deviled Eggs: Decrease salt to 1/4 teaspoon, omit salad dressing and mix 5 tablespoons ketchup into egg yolk mixture.
Deviled Eggs with Olives: Decrease salt to 1/4 teaspoon, omit dry mustard and mix 1/4 cup finely minced ripe olives and 1/8 teaspoon curry powder into egg yolk mixture.
Zesty Deviled Eggs: Decrease salt to 1/4 teaspoon and mix one of the following into egg yolk mixture:
2 slices bacon, crispy fried and finely crumbled
1/2 cup finely shredded processed American cheese
2 tablespoons snipped parsley
1 teaspoon horseradish
Deviled Egg Recipe
- 6 hard boiled eggs
- 1 teaspoon vinegar and pickle juice
- 1/4 teaspoon dry mustard
- 1/2 teaspoon Worcestershire sauce
- 4 tablespoons mayonnaise
Slice eggs in half lengthwise. Remove yolk and mash. Add seasonings and enough mayonnaise to moisten. Pile in egg halves. Sprinkle with paprika, if desired. Chill before serving.
This deviled egg recipe makes 12 halves.
Deviled Egg Recipe
Ingredients
- one dozen large eggs
Filling:
- 1 cup (250 ml) smoked turkey breast (diced)
- 2 tablespoons (30 ml) finely chopped celery
- 1/3 cup (75 ml) chopped seedless red grapes
- 2 tablespoons (30 ml) mayonnaise
- 1 teaspoon (5 ml) chutney
Topping:
- 6 tablespoons (90 ml) mayonnaise
- 1 teaspoon (5 ml) curry powder
- 1/4 teaspoon (1 ml) salt
- dash of pepper
Garnish
- paprika
Place the eggs in a large saucepan with enough salted cold water to cover them. Bring to a boil, reduce heat and simmer for 15 minutes. Remove from heat and immediatley run under cold water.
Mix together the turkey, celery, grapes, mayonnaise and chutney. Stir well.
Peel and carefully cut the eggs in half lenghtwise. Remove egg yolks and place in separate mixing bowl. Add mayonnaise, curry powder, salt and pepper and mix together with the yolks until completely smooth.
Fill each egg white with the smoked turkey mixture until the filling is level with the top of the egg white.
Put the yolk mixture in a pastry bag fitted with a large star-shaped tube. Pipe enough over each egg to cover the filling. Sprinkle each egg with paprika.
Refrigerate until ready to serve.
This deviled egg recipe makes 2 dozen halves.
Crab and Deviled Egg Sandwich
- 1 can crab meat
- 2 hard boiled eggs
- 1/2 teaspoon mustard (prepared)
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- 1/2 small teaspoon curry powder
Drain crab meat. Mix with other indredients. Lobster or chicken may be used. Serve in small buns.
Spicy Deviled Egg Recipe
- 7 hard boiled eggs
- 2 tablespoons mayonnaise or salad dressing
- 1 teaspoon prepared mustard
- salt and pepper to taste
- 12 capers
Remove shell from the eggs and cut 6 of them lengthwise. Remove the yolks. Press yolks and the remaining whole egg through a sieve into a bowl.
Stir in the mayonnaise and mustard. Season with salt and pepper.
Pile back into egg whites and garnish with a caper. Chill before serving.
