Deep Dish Apple Pie
Place a heavy china or custard cup upside down in the center of a 2 or 3 inch deep baking dish. Line the sides of the dish (not the bottom) with pastry letting it extend a little above the top of the dish. Peel, core and slice the apples and place in the baking dish. Add sugar, spice and water and dot with butter. Cover apples with pastry and pinch the edges together. Slash the top pastry to allow steam to escape. Bake at 450 deg. F. for 10 minutes; then reduce the temperature to 350 deg. F. and continue baking for an additional 45 minutes. When serving, slip a knife under the cup to let the juices mix with the apples. Serve with a hard sauce. This apple pie recipe will make 6 servings.
