Curry Chicken Recipes

Curry chicken recipes are probably the meal we have most often in our house. Of all the things we prepare for dinner nothing is as quick and easy as our curried chicken recipe.

But when fellow Canadian Nicole Rush visited our website earlier this month she sent us her favorite curried chicken recipe. I can't wait to try it. I'm sure this one might take the place of our regular one. I'll let you know.

Recipe Name: Apple Curry Chicken - added Feb 05, 2005

Ingredients and Instructions:

  • 3 Tablespoons of Butter or Margarine
  • 1 Small Onion Chopped
  • 3 Apples Peeled, Cored and Sliced
  • 3 Tablespoons of All-Purpose Flour
  • ½ Tsp of Curry Powder
  • 3-4 Boneless Chicken Breasts (Cut into Cubes)
  • 1 Cup of Chicken Broth
  • 1 Cup of Milk (I like to use Coconut Milk for added Flavour!)
  • Salt and Pepper to Taste

Preheat oven to 350 degrees. Saute Apple, Onion, Butter or Margarine until tender. Add Curry Powder and Saute another minute, then add Flour and continue to cook one minute longer. Add Stock or Broth and Milk, stir well. Pour Sauce in backing dish over chicken and bake in preheated oven for 45-50 Minutes. Serve with Penne Pasta!
