Warming Up With a Bowl of Hot Clam Chowder

Living on the westcoast gives us a great appreciation of seafood. Nothing beats a cold winter day like a bowl of hot clam chowder. And with two feet of snow outside and temperatures dipping 10 degrees below freezing, this a great recipe to warm you up after a bout with the shovel and the dreaded white stuff.

Clam Chowder Recipe

  • 2 cups water
  • 2 garlic cloves
  • 3 dozen small clams
  • 1 tbsp. butter
  • 1 cup chopped onions
  • 4 slices bacon, diced
  • 3 cups chicken stock
  • 2 cups peeled and diced potatoes
  • 1 bay leaf
  • 1/4 tsp. thyme
  • 1/4 tsp. allspice
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1 tsp. ground tarragon
  • 4 cups milk
  • 4 tbsp. flour
  • 1/2 cup clam nectar
Directions:

Pour water into a large pot, add clove of garlic and bring to a boil. Add clams, reduce heat and steam 15 minutes or until clams open. Remove clams, mince and set aside. Reserve nectar.

In frying pan, melt butter and saute onions, garlic clove and bacon until onions are soft. Pour off fat and put mixture into a soup pot. Add stock, potatoes and seasonings. Bring to a boil and simmer for 15 minutes or until potatoes are tender but still firm.

Add clams and milk and cook over medioum heat for 15 minutes. Combine flour with clam nectar and stir until smooth. add to chowder, stirring until thickened.

Manhattan Clam Chowder Recipe

  • 1/4 cup butter or margarine
  • 1 large onion (chopped)
  • 3 small potatoes (chopped)
  • 1 cup celery (diced)
  • 2 medium carrots (diced)
  • 1/4 cup green pepper (chopped)
  • 1 can (28 ounce) tomatoes (chopped and drained)
  • 1 1/2 teaspoon thyme
  • 1/4 teaspoon pepper
  • 1/8 teaspoon curry powder
  • 3 dozen large clams (minced) or 2 cans minced clams
  • 2 cups clam nectar (fresh or canned)

In a Dutch Oven melt butter or margarine. Cook onions until just a touch of brown. Add all ingredients except clams. Add enough water or clam nectar to cover vegetables. Bring to a boil. Lower heat, cover and simmer for 30 minutes, or till vegetables are cooked. Add clams. Turn off heat. Cover and let stand for a few minutes until clams are heated.
This clam chowder recipes will serve 6.

Clam Chowder Recipe

  • 1/4 pound salt pork (cubed)
  • 2 small onions (minced)
  • 1 quart shucked clams
  • 6 to 8 medium potatoes
  • water
  • salt (to taste)
  • 1/2 teaspoon pepper
  • 3 1/2 cups milk
  • 6 to 8 soda crackers
  • cold milk

Brown salt pork in deep pot. Add onion and cook until onions are transparent. Arrange potatoes and clams in layers over onions and cover with cold water. Heat to boiling and simmer until potatoes are tender. Add seasonings and milk. Heat to boiling. Add crackers which have been soaked in cold milk. Heat thoroughly.
This clam chowder recipes will serve 6 to 8.

Corn Clam Chowder Recipe

  • 1 tablespoon margarine
  • 1 medium onion (chopped)
  • 1 large celery stalk (chopped)
  • 1 tablespoon flour
  • 1 cup clam nectar
  • 10 to 12 ounces canned, minced clams (undrained)
  • 1 bay leaf
  • 1/4 teaspoon marjoram
  • 1/8 teaspoon black pepper
  • 2 cups potatoes (peeled and cubed)
  • 2 cups frozen yellow corn kernels (drained)
  • 1 cup milk
  • salt to taste

Melt margarine in a large pot over medium-high heat. Add onions and celery and cook, while stirring until onions are transparent. Stir in flour until well mixed. Stir in clam nectar until well blended. Add juice from canned clams, bay leaf, marjoram, pepper, and potatoes. Bring to a boil, then reduce heat and simmer, covered for 10 minutes. Stir occasionally. Add corn and simmer for 5 more minutes. Remove bay leaf. Remove 1 cup vegetables and liquid from pot and run through blender or food processor. Mix until thoroughly pureed. Return to soup, with milk and minced clams. Bring chowder to simmer and season to taste.

Manhattan Clam Chowder Recipe

  • 6 slices bacon (diced)
  • 1 cup chopped onion
  • 2 large potatoes (peeled and diced)
  • 1 teaspoon salt
  • 8 ounces clam nectar
  • 2 cans (8 ounces each) minced clams
  • 1 can (1 pound) tomatoes
  • 1/2 teaspoon thyme

Saute bacon until crisp and set aside. Stir onion into bacon drippings and saute until soft. Add potatoes, salt, and clam nectar. Cover and simmer for 15 minutes or until potatoes are tender. Stir in clams, tomatoes, thyme, and cooked bacon. Simmer for 15 minutes. Garnish with finely cut chives.

Clam Chowder Recipe

  • 1/4 pound salt pork (cubed)
  • 1 clove finely chopped garlic
  • 1/2 cup finely chopped onion
  • 1/2 cup thinly sliced leeks
  • 1/2 cup chopped green pepper
  • 1/2 cup diced carrots
  • 1/4 cup chopped celery
  • 3 cups diced potatoes
  • 2 teaspoons salt
  • 2 cups boiling water
  • 4 cups clam nectar
  • 1 quart shucked clams (minced)
  • 1 can (16 ounce) whole peeled tomatoes (undrained)
  • 1 teaspoon thyme
  • 1/4 teaspoon pepper
  • 1/3 cup chopped parsley
  • 1 bay leaf
  • 1/3 cup ketchup
  • 1 tablespoon butter or margarine
  • 1 tablespoon flour

In a large (5 quart) Dutch Oven or heavy pot, slowly cook salt pork until crisp. Add garlic, onion, and leek. Cook until tender. Add green pepper, carrot, celery, potatoes, salt, boiling water, and clam nectar. Cover and bring to a boil. Separate the necks from the soft parts of the clams. Chop the necks coarsely and add to chowder. Save the soft parts of clams for later. Simmer while covered for about 20 minutes until potatoes are tender. Add tomatoes, thyme, pepper, parsley, bay leaf, ketchup, and soft clam parts. Melt butter in a small saucepan and stir in flour. Remove from heat and mix until smooth. Add to chowder and mix well. Simmer for 15 to 20 minutes.
