Steamed Cranberry Pudding

This recipe for Steamed Cranberry pudding was sent to us by one of our visitors, from Scotland, Maggie Bryson.

1/2 C molasses
1/2 C hot water
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 C flour
1 C cranberries, washed and cut up

Mix Molasses and hot water. Pour over the flour. Add the other dry ingredients and the cranberries.

Pour into a buttered baking dish or container to hold the batter.Cover with waxed paper or foul and make sure the cover stays on tightly. I butter the bottom of it so when the batter rises, it doesn't stick and also leave enough headspace for it to rise. If using waxed paper, an elastic is good to keep the lid on. Place in boiling water in a large container with 2 inches of water. Steam for 2 1/2 hours.

SINFUL PART..The Sauce

1/2 C butter, not margarine
1 tsp vanilla
1/2 C
1 C sugar
1/2 C cream. Half and Half is just fine

Melt the butter and sugar together very slowly in a heavy sauce pan. Add the cream and blend. Add the vanilla last. Slather over slices of the pudding. Pudding is very rich, so start small. Doubles beautifully and keeps well in the fridge. Sauce will separate when cold, but just dish it out and microwave it with the pudding for leftovers.
