Chicken Tetrazzini Recipe

Besides chicken and mushrooms, a chicken tetrazzini recipe may contain a variety of different vegetables in a white cream sauce. This is served atop pasta and can be sprinkled with grated parmesan cheese.

This chicken tetrazzini recipe will serve 6, takes less than an hour to prepare and is cooked in the microwave oven.

Ingredients for chicken tetrazzini:

one 3 pound chicken cut into pieces
1/2 tsp. of salt
dash of pepper
1 cup narrow raw noodles
2 cups of chicken broth
1/2 cup onion (finely chopped)
2 tablespoons pimiento (chopped)
1/4 cup green pepper (finely chopped)
1/2 cup mushrooms (finely chopped)
2 slices of bacon
1 cup cooked peas
1/2 cup grated Parmesan cheese

Place the chicken, salt, and pepper in a large covered casserole and cook in the microwave for 15 minutes. To allow even cooking rearrange the chicken pieces and then continue cooking for another 15 minutes or until the chicken is tender. After cooling, remove all the meat from the bones and cut into bite size pieces.

Measure two cups of chicken broth (using drippings from the chicken) and add with raw noodles to the covered casserole dish. Cook, covered in the microwave for 10 minutes stirring often.

Using a small covered baking dish, cook the onion, pimiento, green pepper, and bacon for 4 minutes in the microwave. Remember to stir once or twice. Then using the large casserole again, combine the chicken, noodles, vegetables, peas, and cheese. Stir gently to completely blend. Return covered to the microwave and reheat for a few minutes until thoroughly heated. Let stand for about 5 minutes to allow liquid to absorb before serving. If the mixture starts to become dry you can add more liquid.

Easy Chicken Tetrazzini Recipe

This is an easy chicken tetrazzini recipe for four using chicken breasts and can be made with simple ingredients everyone usually has on hand.

Ingredients for this easy chicken tetrazzini:

2 tbsp. butter
1 medium onion
1 clove of garlic, peeled and halved
4 chicken breasts
1 - 10 ounce can of cream of mushroom soup
1/2 cup of milk
1/2 pound of spaghetti
1/4 cup of Parmesan cheese

In a skillet saute the onion and garlic until tender. Add the chicken breasts and brown on both sides. Add cream of mushroom soup and milk. Stir, cover, and simmer for 30 minutes.

While the chicken is cooking, cook the spaghetti for the minimum amount of time suggested on the box. Once the spaghetti is cooked, drain and place in a baking dish. Arrange the chicken breasts on top, cover with sauce and then sprinkle with Parmesan cheeze. Bake in the oven for 20 to 30 minutes at 400 degrees F.
