Chicken Parmigiana Recipes

Chicken Parmigiana

  • 6 chicken breasts
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • flour
  • 2 eggs, beaten
  • 2 1/4 cups cracker crumbs
  • shortening
  • 3 medium onions, chopped
  • 3 medium cloves of garlic, minced
  • 2 - 19 ounce cans whole tomatoes
  • 1/3 cup dry red wine
  • 1 bay leaf, crushed
  • 1/4 teaspoon oregano
  • 2 - 9 ounce packages Mozzarella chesse
  • mushrooms
Flatten chicken breasts slightly. Sprinkle with 3/4 teaspoon salt and pepper. Dip into flour, then into eggs. Coat with cracker crumbs. Brown slightly in hot shortening on both sides until golden brown. Take from pan.

Heat 2 tablespoons shortening; add onions and garlic and saute until golden brown. Stir in tomatoes, bay leaf, wine, oregano, mushrooms and remaining 3/4 teaspoon salt. Bring to a boil, stirring occasionally.

Spoon half the sauce into a 13"x9"x2" baking dish. Arrange chicken pieces on top. Tuck cheese slices between chicken. Pour remaining sauce over. Sprinkle with Parmesan cheese. Bake in hot oven (400 degrees F.) for 15 minutes.
