Chicken and Pasta Recipes

When you're in a hurry, one of these chicken and pasta recipes may help to save the day. If you don't have the type of pasta mentioned in the recipe, try an experiment and use what you have on hand. You may have to adjust accordingly.

The first of our chicken and pasta recipes is for Chicken Lasagna. It's made by cooking the noodles first, mixing the sauce, shredding some cheese and then layering it all in a cooking pan.

Ingredients for Chicken Lasagna:

10 - 12 lasagna noodles
4 quarts boiling water
1 tablespoon vegetable oil
1 tablespoon salt

Cook the lasagna noodles until tender. Drain and rinse in cold water.

To make the sauce:

1 can cream of mushroom soup
1 can cream of chicken soup
1 cup chopped onions
2 cups sliced mushrooms
1 cup cottage cheese
1 beaten egg
1/2 cup sour cream
1/2 teaspoon poultry seasoning
1/4 teaspoon oregano
1/4 teaspoon basil
3/4 cup parmesan cheese
4 cups cooked and shredded chicken

In a skillet saute the mushrooms and onions in 1 tablespoon of butter or margarine. In a bowl combine the remaining ingredients, add the sauted mushrooms and onions and mix well.

2 cups shredded cheddar cheese
2 1/2 cups shredded mozzarella cheese

Using a greased 9x13 inch baking pan place a layer of noodles on the bottom and cover with half of the chicken sauce. Cover that with the cheddar cheese, then another layer of noodles, the rest of the chicken sauce and top with the mozzarella cheese. Cover with aluminum foil and bake at 350 deg. F. for 40 minutes. Uncover and bake for an additional 10 or 15 minutes. Let stand for 10 - 15 minutes before cutting to allow it to set up.

Leftovers from chicken and pasta recipes like this can be frozen and enjoyed later.

Chicken and Pasta Casserole

Another one of our chicken and pasta recipes done in the oven as a casserole.

Ingredients and instructions for chicken and pasta casserole:

1/4 cup chopped onion
1 1/2 cup chopped celery
1 cup fresh chopped mushroooms
1 cup chopped green pepper

In a larger skillet saute vegetables for a few minutes in a little butter. Then add the following:

2 cans cream of mushroom soup
2 tablespoons soya sauce
Tobasco sauce (a few drops to taste)
fresh ground black pepper
1/2 cup sherry or white wine
2 - 3 cups shredded, cooked chicken

Mix well and simmer for several minutes. Cook 1 cup of thin noodles according to package directions. Drain and add to chicken mixture. Pour into a casserole dish and sprinkle with a mixture of chopped cashews or dry roasted peanuts and fried chow mein noodles. Bake for 45 minutes to an hour at 325 deg. F.

Spicy Stir Fry Chicken and Pasta Recipe

Chicken and pasta recipes ingredients and instructions:

1 lb. chicken (cut into bite size pieces)
1 tablespoon cooking oil
1 clove minced garlic
1 leek ( white and light green portion only)
1 red pepper
1 yellow pepper
1 red jalapeno pepper
1 green jalapeno pepper
2 cups sugar peas
1 1/2 cups of chicken stock
1/4 cup oyster sauce
1 tablespoon hot curry powder
1 - 14 ounce can miniature corn pieces
1 - 8 ounce can sliced water chestnuts
1 tablespoon corn starch
1 tablespoon water

Heat oil in the wok and fry chicken until done. Remove from pan, cover and set aside. Cut leeks and peppers into bite size pieces and cook with garlic, peas, and stock for about 3 minutes.

Add the oyster suace, curry, corn and water chestnuts. Mix well, cover, and continue cooking for another few minutes. Combine the water and cornstarch and along with the chicken add to the wok and bring to a boil. Continue cooking until the vegetables are tender and the sauce becomes thickened. Serve over pasta, noodles or rice.
