Cheese Pastry Appetizers

These cheese pastry appetizer recipes include 3 different fillings of tuna, shrimp, and mushrooms.

Cheese Pastry

This pastry can be cut round and folded for flips or placed in small tart tins for shells.

1 cup margarine
1 - 8 oz. cream cheese
1/2 tsp. salt
2 cups flour
1 egg yolk
2 tsp. milk

Beat the margarine, salt, and cheese until creamy. Add the flour slowly and then the egg yolk and milk. Form into 2 balls and chill overnight in the refrigerator.

Remove from fridge and let stand 10 minutes before rolling out into sheets. Cut into circles for flips or shells. Add filling and bake at 350 F. for 10 minutes or until slightly browned.

Fillings:

Tuna:

1 - 6 1/2 oz. can flaked white tuna
1 tsp. horseradish
1/2 cup cream of chicken soup
1 tsp. minced onion

Shrimp:
1 large can shrimp
3/4 cup mayonnaise
1/2 cup grated cheddar cheese
1 green onion finely chopped

Mushroom:
1/2 lb. fresh mushrooms
2 tbs. butter
1/2 cup chopped onion
1/2 tsp. salt and pepper
dash nutmeg
1 tsp. lemon juice
2 tsp. flour
1/2 cup sour cream
1 tsp. dried dill seed

Chop mushrooms and cook with onions in butter for approx. 5 minutes. Stir in all ingredients except sour cream and dill seed. Cook for a few minutes longer. Remove from heat and add sour cream and dill seed.

Cranberry Brie Bites

1 1/2 cups cranberry sauce (use homemade or store-bought cranberry sauce)
1 puff pastry sheet
1 brie triangle, chilled

Preheat oven to 375 degrees F. Thaw puffy pastry sheet flat.

Cut puff pastry sheet into approximately 3-inch squares and place them into mini muffin tins, pressing them into the shape of the muffin hole.

Place a 1-inch slice of brie in the center of each puff pastry and then top it with approximately 1 tablespoon of cranberry sauce.

Bake 10 minutes or until puff pastry corners are toasted light brown. Let cool 5 minutes before serving.
