Carrot Cake


(United States)

Ingredients and Instructions:

3 cups flour
2 tsp. baking soda
2 tsp. cinnamon
2 cups sugar
1/2 tsp. salt

Combine and mix the above ingredients.

Add the following to the mixture:

2 cups raw, grated carrots
1 small can crushed pineapple, with juice
1 cup vegetable oil
3 eggs
1 1/2 cups coconut
2 tablespoons grated orange rind
1 1/2 cup nuts
2 tsp. vanilla

Mix well.

Bake at 350 deg. for 1 hour in 9x13 pan.

Icing:

Combine the following and spread on cake after cooled.

1 (8 oz) pkg cream cheese
1/2 cup margarine or butter
1 1/2 tsp. vanilla
2 cups powdered sugar

Carrot Cake NEW

2 cups white sugar
1 cup oil
4 eggs
2 cups grated carrots
1 cup raisins
1 cup (1/2 can) crushed pineapple and juice
2 cups flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon nutmeg
1 teaspoon cloves
2 teaspoons cinnamon

In a large mixing bowl, beat sugar, oil and eggs together. Add carrots, raisins, pineapple and juice, and mix well. Combine all the dry ingredients and mix well.

Place the mixture in a greased and floured 9x13 inch baking pan and bake for 50-60 minutes or until done. Check with toothpick. Cool before frosting.

Cream Cheese Carrot Cake Icing:

4 ounces cream cheese
1/2 cup butter or margarine
2 teaspoon vanilla
2 cups icing sugar

Mix and frost.

Pineapple Carrot Cake NEW

3 cups flour
2 cups sugar
2 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla
1/2 teaspoon salt
2 cups grated carrots
1 1/2 cups oil
1 1/2 cups nuts (chopped)
1 small can crushed pineapple with juice
3 eggs
2 tablespoons orange zest or 1/2 cup coconut

Mix all the dry ingredients and then add the rest. Mix well. Bake in a greased and floured tube pan for one hour at 350 degrees F. or until set. Allow to cool before icing. Serve or wrap for freezing.

Nut Icing:

Combine 1/2 cut butter and one 8 ounce package of cream cheese. Beat until fluffy. Add powdered sugar, vanilla, and walnuts. Mix well.

Carrot Cake NEW

1 1/2 cups oil
2 cups sugar
4 eggs
2 cups flour
1 teaspoon cinnamon
1/2 teaspoon salt
2 teaspoon baking soda
3 cups grated carrot
1 cup nuts(chopped)

Mix all the ingredients in the order listed above. Put in a greased bundt pan and bake at 350 degrees F. for about 35-40 minutes. The carrot cake will be done when the cake springs back when gently pressed. Frost when cooled.

Frosting:

2 cups powdered sugar
8 ounce package cream cheese
4 tablespoon butter
2 teaspoon vanilla.

Mix and spread.
