Carrot Cake


(United States)

Ingredients and Instructions:

3 cups flour
2 tsp. baking soda
2 tsp. cinnamon
2 cups sugar
1/2 tsp. salt

Combine and mix the above ingredients.

Add the following to the mixture:

2 cups raw, grated carrots
1 small can crushed pineapple, with juice
1 cup vegetable oil
3 eggs
1 1/2 cups coconut
2 tablespoons grated orange rind
1 1/2 cup nuts
2 tsp. vanilla

Mix well.

Bake at 350 deg. for 1 hour in 9x13 pan.

Icing:

Combine the following and spread on cake after cooled.

1 (8 oz) pkg cream cheese
1/2 cup margarine or butter
1 1/2 tsp. vanilla
2 cups powdered sugar
