Carrot Cake Recipes

Carrot Cake

• 350 g (12.4 oz.) flour
• 1 tsp baking powder
• 300 g (10.6 oz) sugar or brown sugar
• 2 tsp cinnamon
• 3/4 tsp 'cardamone' (if you don't have this you can use a little more cloves or cinnamon)
• 2 pinch ground cloves
• 1 pinch of salt
• 250 g (8.8 oz) finely grated carrots
• 1 lemon, peel and juice
• 250 g (8.8 oz) ground almonds
• 4 eggs, beaten
• 200 g (7 oz) melted and cooled margarine

Mix flour and baking powder together and sift. Add the sugar, cinnamon, cardamone, cloves and salt to the flour/baking powder mix. Mix in the carrots, lemon, peel and juice. Add in the eggs and butter.

Stir with a wooden spatula until smooth. Pour into a loaf pan, whose sides and bottom were previously buttered.

Cook for about 65 min. on the lowest rack of the oven, preheated at 180 Celsius (350 F).

Cool down. Enjoy.

Carrot Cake Recipe

• 2 cups sugar
• 2 teaspoons baking soda
• 2 teaspoons baking powder
• 3 teaspoons cinnamon
• 4 eggs
• 1 cup chopped nuts (optional)
• 1 teaspoon salt
• 1 1/2 cups vegetable oil
• 3 cups grated carrots
• 1 teaspoon vanilla

Sift together sugar, flour, salt, soda, powder and cinammon. Stir in oil. Add eggs one at a time, mixing well after each addition. Add carrots, nuts and vanilla mixing thoroughly. Pour into floured and greased 9x13 inch cake pan.
Bake in 350 degree F. oven for 30 minutes.

Carrot Cake Recipe

• 2 cups flour
• pinch of salt
• 2 teaspoons baking powder
• 2 teaspoons cinnamon
• 1 1/2 teaspoons baking soda
• 1 1/2 cup oil
• 2 cups sugar
• 4 eggs
• 1 cup drained crushed pineapple
• 2 cups finely grated raw carrots
• 1/4 cups walnuts (optional)

Sift together flour, salt, cinnamon, baking power and baking soda. Add oil, sugar and eggs one at a time. Beat until all is well mixed. Add pineapple, carrots and walnuts.
Bake at 325 degrees F. 45 to 50 minutes in a 9X13 inch cake pan. (Makes a large cake)
