The second group are those that are made without shortening and include sponge and angel food cake recipes. Butter cake recipes are usually made in layers while sponge and angel food cake recipes are made in tubed type pans. To be succesful at cake making you should make sure that you follow the directions exactly. You should always use the size and type of pan that is specified in the recipe and only fill the pan to a maximum of two-thirds full. You should always bake your cakes in a preheated oven and at the temperature specifed in the recipe. Always place the cake pan in the oven so that the top of the cake will be in the middle of the oven. If baking more than one pan at a time make sure that the pans are staggered and not directly over one another. The sides of the pans should not touch each other or the walls of the oven. Always check your cakes after the minimum baking times to see if they are done.
Before frosting your cake make sure that it is completely cooled.
