A couple of cabbage roll recipes and a recipe for lazy cabbage rolls.
This cabbage roll recipe was submitted by Cam Jankowial from Midland in the United States.
1 medium size head cabbage
1 lb. ground beef
1/2 lb. ground pork
1/2 lb. ground veal (optional, can use 1 lb pork instead)
1 Cup uncooked rice
1 onion (about 1/2 cup) finely chopped
1 egg lightly beaten
1/2 tsp garlic powder or 1 tsp crushed fresh garlic
1 tsp salt
1 tsp coarse ground pepper
1/2 cup tomato juice for meat mixture
Additional tomato juice (or Spicy V-8) for baking
In a large bowl, mix everything (except cabbage) thoroughly.
The cabbage can be tenderized in 1 of 2 ways.
Place a large spoonful of the meat mixture near the stem end of a cabbage leaf. Roll the stem side over the meat, fold in the sides and roll up.
Place all of the rolls in a large casserole dish or baking (lasagna) pan. Cover half way with additional tomato juice (Spicy V-8 is good too!) then cover pan with tin foil and bake at 350 for 1 and 1/2 hours.
1 pound ground beef
1 pound ground pork
2 large onions
1 1/2 cups uncooked rice
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 large head of cabbage (shredded)
1 can (10 ounce) tomato soup
Fry the beef, pork, and onions together until brown. Cover the rice with boiling water, add salt and pepper; then boil until water is absorbed. Fry the cabbage until limp.
Mix all ingredients together in a large casserole and cover with tomato soup. Cover and bake at 350 degrees F. for 1 hour.
This cabbage roll recipe will serve 6 to 8.
1 large cabbage
1 pound ground beef
1/2 pound ground pork
1/2 cup rice
1 onion (finely chopped)
2 tablespoons butter
5 slices of bacon
Remove core from whole head of cabbage. Scald cabbage in boiling water. Remove a few leaves at a time as needed to prevent wilting. Cool before using.
Wash rice in cold water and stir into two quarts rapidly boiling salted water. Boil 10 minutes and strain. Run cold water through rice in strainer. The rice will be half cooked.
Saute onion in butter until transparent. Combine onions with meat, egg, rice and seasoning. Mix well.
Spread each leaf with meat about 1/2 inch thick. Fold the two opposite sides and roll, staring with one of the opposite ends. Fasten with toothpicks.
Place cabbage rolls in baking dish and cover with 5 slices of bacon and roast for 2 hours at 300 degrees F. Baste from time to time, or - add one cup water to tomato puree and simmer slowly for 2 hours. Watch closely and add more water, if necesary.
Here is another recipe for cabbage rolls sent in by one of our visitors which uses ground beef and pork.
