POTATO BISCUITS
(these are great!!)
- 1 medium sized cooked mashed potato
- 1 egg yolk
- 4 tablespoon rice flour
- 2/3 cup cornstarch
- 1/2 stick margarine(50g)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Mix all ingredients until workable, add more cornstarch if necessary.
Open dough, cut biscuits and bake at 350° for 20 minutes.
Brazilian Recipe for Tuna fish balls
- 4 cups cooked mashed potatoes
- 1 can tunafish
- 1/2 tablespoon chopped onion
- 3 eggs
- salt, pepper...
- corn starch if necessary
Mix potatoes, tunafish, egg yolks and seasonings.
Beat egg whites for 5 minutes and add to mixture.
Make balls (ping pong ball sized) and fry in hot oil.
GOLDEN CRACKERS
- 14 oz rice flour
- 1/2 cup corn starch
- 1 full tablespoon potato starch
- 1 full teaspoon salt
- 1/2 teaspoon sugar
- 1 full teaspoon xantham gum
- 1 tablespoon grated hard cheese (parmesan)
- 1 teaspoon baking powder
- 2 eggs
- 2 1/2 tablespoon margarine
- 5-6 tablespoon water
Mix all ingredients, except water, mix well with hands.
Add water little by little and knead hard with hands
until you have a smooth playable ball. Open small portions of dough and cut squares. Preheat oven to 350 and bake until golden.
You may add more cheese, garlic,etc... to make appetizer biscuits.
Brazilian Recipe for Chocolate Sponge Cake
- 4 eggs
- 6 tablespoon sugar
- 2 tablespoon corn starch
- 3 tablespoon powdered chocolate
- 1/2 tablespoon baking powder
Beat egg yolks, sugar and powdered chocolate. Add corn starch, baking powder and then egg whites beaten for 5 minutes. Bake at 350° for 25-30 minutes in a greased floured(cornstarch) baking pan.
Brazilian Recipe for Potato Starch Sponge Cake
- 4 eggs
- 1 cup sugar
- 1 cup potato starch
- juice of one lemon
- 1/3 teaspoon salt
Beat egg yolks and sugar until creamy. Add potato starch and lemon juice and beat again. In a separate bowl beat egg whites with salt until foamy (about 5 minutes) and add to mixture. Do not beat. Bake at 350° for 25-30 minutes in a greased floured(cornstarch) baking pan.
Brazilian Recipe for Vanilla Cake
- 4 tablespoon butter
- 3 eggs
- 2 cup sugar
- 14 oz rice flour
- 3 tablespoon corn starch
- 1 ½ cup milk
- 1 tablespoon baking powder
- 1 tablespoon vanilla sugar
Beat margarine, egg yolks and sugar until creamy.
Add rice flour, corn starch, vanilla sugar and milk, and beat for a few minutes.
Add baking powder and gently mix.
Add beaten egg whites. (Beat egg whites for 5 minutes, until foamy).
Preheat oven to 350 and bake for 40 minutes, or until golden.
Bombocado - Brazilian dessert
- 200g (14 oz) flaked coconut
- 4 eggs
- 2 can condensed milk (385 ml)
- 1 teaspoon baking powder
- 200ml coconut milk
Beat all ingredients using blenders.
Put mixture in a baking pan(greased and powdered with corn starch). Preheat oven to
350 and bake for 40 minutes.
Yellow Cookies
- 1 cup fine corn flour
- 1/2 cup tapioca flour
- 1/2 cup potato starch
- 1 teaspoon baking powder
- 4 tablespoon sugar
- 4 tablespoon flaked coconut
- 1 egg
- 1/2 cup margarine
- 1 teaspoon xantham gum
Mix flours, baking powder and flaked coconut. Beat margarine, eggs, sugar and xantham gum and add flour mixture to it. Knead with hands until smooth. Make small balls and gently flatten with a fork. Preheat oven to 350 and bake until golden in a greased baking pan.
