Banana bread loaf

Moist Banana Bread

Ingredients and Instructions:

This one comes from Josie Scheckel who lives in DeWitt, United States.

1 cup mashed bananas
1/2 cup melted oleo
1 tsp baking powder
2 eggs
1 tsp baking soda
1 cup sugar
1 tsp vanilla
1/2 tsp salt
1/2 cup water
2 cup flour
1/2 cup chopped nuts

In bowl beat eggs, sugar and cooled melted oleo, add mashed bananas,then add rest of ingredients and beat till well blended. Pour into 2 small loaf pans that have been greased and floured. Bake at 350 for about 40 min or till toothpick inserted comes out clean. This is a very moist heavier banana bread..freezes beautifully.

Banana Bread Recipe

This recipe comes from Amber in Canada.

Ingredients and Instructions:

This recipe makes one 8 1/2 x 4 1/2 x 2 1/2 inch loaf

3 ripe bananas, well mashed
2 eggs, well beaten
2 cups flour
3/4 cup sugar
1 teaspoon salt
1 teaspoon baking soda
1/2 cup chocolate chips

Preheat oven to 350 degrees. Grease loaf pan. Mix bananas and eggs together in a large bowl, stir in the flour, sugar, salt and baking soda. Add chocolate chips and blend.

Put the batter in the pan and bake for 1 hour. Remove from pan to a rack.

Serve still warm or cooled.

Here's a banana bread recipe that's a little different by using mayonaisse. It comes from Jeannette who lives in Edmonton Alberta, Canada.

Best Banana Bread Recipe

Ingredients and Instructions:

1 cup mayonnaise
3 bananas
3/4 c. sugar
2 c. flour
2 tsp. baking soda

Beat together. Bake at 350 (F) for 60 min. Cool completely before cutting.

Banana Tea Loaf

  • 1 cup sifted flour
  • 3/4 cup rolled Graham wafers
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup shortening
  • 2/3 cup sugar
  • 2 eggs
  • 1 cup mashed ripe bananas (2-3)
  • 1/3 cup chopped walnuts

Sift the flour, Graham wafer crumbs, baking powder, baking soda and salt. Beat shortening until creamy. Gradually beat in sugar until light and fluffy. Add eggs and beat well. Stir in dry ingredients alternately with the bananas. Fold in the nuts. Turn into a well-greased loaf pan. Bake in a 350 deg. F. oven for about 1 hour.

Banana Bread (low-fat)

  • 1 1/2 cups all-purpose unbleached flour
  • 1/4 cup rye flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon powdered ginger
  • 1 cup ripe banana, mashed (about 2 medium bananas)
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons frozen orange juice concentrate
  • 1/3 cup diet margarine
  • 2 eggs (1 yolk only)
  • 1/3 cup evaporated skim milk
  • 1/2 cup pecans or walnuts (chopped) optional
  • 6 teaspoons currants, divided
  • few dashes cinnamon

Coat bottom of 9x5 inch glass loaf pan with nonstick vegetable cooking spray. In mixing bowl combine flours, baking powder, baking soda, salt, and ginger. In another small bowl, mash bananas, mix with lemon juice and set aside.
In large bowl, combine orange juice, margarine, eggs, and milk. Stir in chopped nuts and 5 teaspoons currants. Fold in mashed bananas and add dry ingredients, mixing well. Turn into microwave-safe pan and top with 1 teaspoon currants and a few dashes of cinnamon.
Place in microwave on inverted saucer. Microwave on medium-high (70%) 3 1/2 to 4 minutes. Turn pan and continue microwaving at 70% another 3 1/2 to 4 minutes. Microwave on high 4 to 5 minutes, until knife inserted into center of bread comes out clean. If browned top is desired, place under conventional oven broiler 30 seconds. Let cool 10 minutes. Remove from pan. If bottom is still damp, return to microwave, bottom up and microwave on high 1 to 2 minutes, until dry.
