Banana Nut Loaf

This banana nut loaf recipe makes one loaf.

Ingredients:

2 cups sifted flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
3 tbsp. instant dry milk
1/3 cup shortening
2/3 cup sugar
1 egg
1/3 cup water
1 tsp. vinegar
1 cup mashed bananas
1/2 cup chopped nuts

Pre-heat oven to 350F.
Grease a 9x5x3 inch pan well. Mix the shortening, sugar, egg, water, vinegar and bananas until light and fluffy.

Add dry ingredients all at once, mixing quickly but thoroughly.

Stir in 1/2 cup chopped nuts.
Put in pan.

Bake approximately 1 hour or until bread pulls away from sides of pan.

Let stand in pan for 10 mins. before turning on wire rack to cool.
