Baked Burger Kabobs
8 carrots cut into 1 1/2" chunks
9 small onions
2 lbs. lean ground hamburger
1/2 cup dry bread crumbs
2 tsp. salt
1/2 tsp. pepper
2 eggs - beaten
2 green peppers cut same as carrots
4 slices bacon cut into 8 pieces
3 cans tomato soup
3/4 - 1 cup water
4 tsp. Worcestershire Sauce
1/2 cup brown sugar
Minced garlic or garlic powder if desired (to taste).
Parboil carrots and onions approximately 10 minutes.
Combine ground beef, eggs, bread crumbs, salt and pepper.
Form into balls.
Thread carrots, onion, meatballs, green peppers & bacon on 8 skewers.
Sprinkle with salt and pepper.
Brown in shallow pan at 400F.
Pour off excess fat.
Combine soup, water and Worcestershire, brown sugar and garlic (if desired).
Pour over kabobs
Bake 40 mins. at 350F basting occasionally.
Serve on rice topped with sauce from pan.
Serves 8.
