Bulkogi

  • 2 pounds flank steak
  • 1/2 cup chopped onion
  • 4 cloves garlic (crushed)
  • 5 tablespoons soy sauce
  • 5 tablespoons salad oil
  • 1 tablespoon sesame seeds (crushed)
  • 1 tablespoon sugar
  • 2 tablespoons crushed black pepper
  • 3 tablespoons dry sherry
  • 3 tablespoons diagonally sliced scallion

Remove any excess fat from the steak and wipe with damp paper towel. Cut the steak into thin slices across the grain to obtain pieces 1/4 inch thick and about 3 inches long. Make a marinade by combining all ingredients except the scallion in a bowl and mixing thorougly. Place the steak in a single layer in a glass baking dish and cover with the marinade making sure the steak is completely coated. Place the dish of steak in the refrigerator covered for about 2 hours. Lightly coat a heavy skillet with oil and pan-broil the steak over high heat for 1 minute to quickly sear. Don't overcook. Place on a serving platter and garnish with scallions.

Cantonese Lobster

  • 6 frozen rock lobster tails (thawed 6-8 ounce each)
  • 1/4 cup cooking oil
  • 1 clove garlic (finely chopped)
  • 1/2 pound ground pork
  • 2 tablespoons cornstarch
  • 1/4 cup soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 1/4 cups boiling water
  • 2 eggs
  • 1/2 cup chopped green onion

Remove the meat from the lobster shells in one piece and cut it crosswise into 2-inch pieces. Using a large covered skillet, heat the oil and saute the garlic and pork, stirring, until the pork is no longer pink. In a small bowl combine the cornstarch and 1/3 cup of water and make smooth. Add to the pork while stirring, the soy sauce, sugar, salt, pepper, boiling water, and cornstarch mixture. Bring to a boil, then reduce heat to a simmer, and stir until thickened (about 10 minutes). Add the pieces of lobster and cook over a low heat, covered, for 10 minutes until the lobster is tender. Beat the eggs in a small bowl lightly with a fork. Pour into the lobster mixture and stir so that the eggs form into shreds. Add the green onion and serve immediately.

Asian Recipe For Pi-Bim Pahb

  • 1 pound beef (lean brisket, rump or sirloin)
  • 4 tablespoons cooking oil
  • 4 medium onions (sliced)
  • 2 cloves garlic (crushed)
  • 1 cup cucumber (peeled and chopped)
  • 4 sticks of celery (chopped)
  • 2 medium-size green peppers (chopped)
  • 4 tablespoons soy sauce
  • 3 tomatoes (halved)
  • 2 cups long or medium grain rice
  • water
Sauce
  • 2 tablespoons soy sauce
  • 4 carrots (grated)
  • 2 cups white stock
  • 1 tablespoon vinegar
  • 2 tablespoons cornflour
  • 4 tablespoons water

Finely dice the beef and toss in hot oil with onions and garlic. Cook until the onions begin to soften. Add the cucumber, celery, and green pepper. Continue cooking for approx. 30 minutes, stirring often, to prevent the vegetables and meat from drying. Add the tomatoes, soy sauce, and seasoning near the end of cooking time. At the same time place the rice in a separate saucepan and cover with cold water and seasoning. Cover and simmer for 30 minutes. Make the sauce in another pan by adding soy sauce, grated carrots, and stock. Simmer until tender and beat until smooth. Add vinegar and cornflour, blended with cold water. Cook until thickened. Serve by mixing the rice with the meat and vegetables and topping with the sauce.

Sweet Lemon Spareribs

  • 6 pounds spareribs (cut into serving pieces)
  • 1 can (6 ounces) frozen lemonade concentrate (thawed)
  • 3/4 cup bottled barbecue sauce

Place the spareribs in a large pot and cover with water. Heat to boiling; reduce heat and simmer, covered, for 90 minutes until tender. Remove the spareribs and place in a baking dish. Combine the lemonade concentrate and the barbecue sauce and pour over the ribs. Cover and place in the refrigerator for 6-8 hours. Place the ribs in a shallow baking dish, bone side down, and cook in a 375 degree F. oven for approx. 45 minutes. Baste often with the sauce mixture.

Beef and Pea Pods

  • 1 1/2 pounds sirloin steak (3/4 inch thick)
  • 1 1/2 tablespoon soy sauce
  • 2 slices fresh ginger root (crushed)
  • 1 clove garlic (crushed)
  • 1 1/2 cups frozen Chinese snow peas
  • 1/4 cup cooking oil
  • 1/3 pound mushrooms (sliced)
  • 5 stalks Chinese cabbage (chopped)
  • 1 large onion (sliced)
  • 1 1/2 cups sliced water chestnuts
  • 1 cup bamboo shoots
  • 2 1/2 cups chicken broth
  • 1/4 cup cornstarch
  • 3/4 teaspoon salt
  • 1/2 teaspoon sugar
  • Chow mein noodles

Cut the meat into very thin slices. Mix the soy sauce, ginger root and garlic, and sprinkle over the meat. Toss and allow the meat to marinate for 1 hour. Run cold water over the frozen peas until they separate, then drain. Using a large skillet or wok, heat 2 tablespoons of oil and brown the meat, turning once. Remove the meat and set aside, keeping warm. Add the rest of the oil to the pan, along with the mushrooms, cabbage, onion, water chestnuts, and bamboo shoots. Stir while cooking for 2 minutes. Add the peas, and half the chicken broth. Cover and cook for 2 minutes. Mix the remaining broth, cornstarch, soy sauce, salt and sugar and pour into the skillet. Cook and stir constantly, until the mixture boils and thickens. Stir while boiling for 1 minute. Add the meat and heat thoroughly. Serve over chow mein noodles.
