Recipe Name: Rotel Chicken

Ingredients and Instructions:

4 boneless skinless chicken breast
1 can cream of chicken soup
1 can cream of celery soup
1 can rotel tomatoes (not drained)
doritos (crushed)
Veleeta (sliced)
1 can mushrooms (optional)

Place the chicken in a metal pan (9x13 is fine) and bake for 25 mins. While chicken is cooking, combine soups and tomatoes in a small pot and heat. After chicken is done, place a small amount of the soup mixture on the chicken so the first layer of doritos will "stick". Layer with chips and soup until all soup mixture is used. Place slices of cheese on top and cook another 30 mins at 350. It is soooo good!

Hi, This recipe is from my website, Rockin Robin's Cooking Mexican Recipes. I really appreciate the link.

Just a little background: I worked in my family's Mexican restuarant while growing up. Dad taught me how to cook Mexican. I decided to start a website with SBI (don't know how I could have done it otherwise) on a topic I know and love. My site contains a collection of delicious recipes from chicken enchiladas, chile verde, tacos, Mexican appetizers, desserts and more.

Recipe Name: Mexican Eggs and Tortillas

Ingredients:

  • 4 corn tortillas
  • 4 eggs
  • 2 green onions, finely chopped
  • 3/4 to 1 cup canola oil
  • 1/4 cup diced Chile Ortegas
  • 1 cup cheese, shredded, cheddar, Monterey jack, or any other you like.
Directions:

Heat the canola oil in a frying pan over medium high heat. Slice the tortillas into strips (1/2 inch by 2 inches) and place in the hot oil to fry. Cook the tortillas until they become crispy and slightly browned.

Drain the oil from the pan. Scramble the eggs and pour into the frying pan on top of the tortillas. Add the rest of the ingredients by sprinkling them over the eggs.

Cook over medium heat, turning the eggs until they are cooked through.

Serve with salsa and some delicious Mexican hot chocolate and enjoy! This Mexican breakfast recipe will serve 2 to 3 people.

Recipe Name: French Toast

Ingredients and Instructions:

  • Pinch of salt
  • Pinch of pepper
  • Tabasco sauce
  • 2 eggs
  • 1/2 cup milk
  • 4 slices bread
  • butter
Crack the eggs and the milk into a mixing bowl and whisk with a fork.Add two or three drops of Tabasco sauce and the salt and pepper.Whisk again.

Then put a slice of bread in the mixture and take it straight back out again.Place a saucepan on the stove at low heat and place a little bit of butter in it.

Then when the butter melts place the bread on the saucepan and cook for four minutes and then turn it over for three minutes.

Enjoy.

Recipe Name: Crockpot Cheeseburger Sammies

Ingredients and Instructions:

Received this just recently and we tried them and they are very good sandwiches so added this recipe to my files to keep.

  • 1 1/2 lbs lean ground beef (or ground turkey)
  • 1/2 tsp garlic-pepper seasoning
  • 1 (8 oz) pkg Velveeta, cubed (2 C)
  • 2 TBS milk
  • 1 green pepper (optional)
  • 1 tomato seeded and diced (optional)
  • mushrooms (optional)
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 8 sandwich buns
In large skillet, brown meat and garlic-pepper seasoning until well cooked. Drain.

In 3 1/2 to 4 quart crockpot, combine cooked meat and all remaining ingredients except buns; mix well.

Cover, and cook on low heat for 4-5 hours. Spoon onto buns.

Recipe Name: Pumpkin Pie Pancakes

Ingredients and Instructions:

  • 2 cups flour
  • 2 Tbsps. brown sugar
  • 1 Tbsp. baking powder
  • 1 1/4 Tsp. pumpkin spice
  • 1 Tsp. salt
  • 1/2 cup Libby's Pure Pumpkin
  • 1 large egg
  • 2 Tbsps. vegtable oil
For Pumpkin Sauce
  • 1 cup maple syrup
  • 1 1/4 cup Libby's Pure Pumpkin
  • 1/4 Tsp. cinnamon
Combine flour, brown sugar, baking powder, spice and salt in large bowl. Combine milk, pumpkin, egg and veg. oil in small bowl. Add flour mixture. Stir just until moistened. Batter may be lumpy. Cook as normal for pancakes. For sauce, Heat maple syrup, pumpkin, and cinnamon in small saucepan until warm.
