Sonda Skillman sent us this casserole made in a crock pot.

Category: Main Course

Recipe Name: Cowboy Casserole (Crockpot)

Ingredients and Instructions:

  • 1 onion, chopped
  • 1 1/2 pounds ground chuck, browned, drained
  • 6 medium potatoes, sliced
  • 1 can red beans
  • 1 can tomatoes, mixed with
  • 2 tablespoons flour
  • Salt, to taste
  • Freshly-ground black pepper, to taste
  • Garlic powder, to taste
Put chopped onion in the bottom of the crockpot; layer with browned ground beef, sliced potatoes, and beans. Spread tomatoes or soup over all. Sprinkle with seasonings as desired. Cover and cook on LOW for 7 to 9 hours.

This recipe yields 4 to 6 servings.

Comments: One can of condensed tomato soup may be used in place of the tomato-flour mixture.

Recipe Name: See`s Fudge

Ingredients and Instructions:

  • 1 Cube Butter
  • 1 12oz pkg Semi-Sweet Choc Chips
Melt together in nonstick pan on low heat (or double boiler)

While Melting...

In Separate Bowl, Mix together with Hand Mixer till Smooth and creamy:

  • 1 box Powdered Sugar
  • 2 Eggs
  • 1 tsp Vanilla
Mix all together, add walnuts if desired. Pour into Buttered Dish. Store at room temp.

For variations...add Miniture Marshmellows to the above for rocky road fudge and for Peanut Butter Fudge, use Peanut Butter Chips instead of Choc Chips.

Recipe Name: Mexican Junkyard

Ingredients and Instructions:

  • Bag of tortilla chips (save some back for dipping if desired)
  • Jar of refried beans (cooked down with a bit of water)and/or
  • Jar of black beans
  • Pound or so of browned ground beef
  • Jar of salsa (can cook with ground beef beforehand if desired)
  • Shredded sharp cheddar cheese
Layer all these in a large lasagne pan lined with tinfoil. Bake until cheese melts and dish is heated through.

Top with sour cream and other desired toppings like olives (blech)

Jennifer sent us this no bake cookie recipe for chocolate crunchies.

Recipe Name: Chocolate Crunchies

Ingredients and Instructions:

  • 16 oz package chocolate chips
  • 16 oz package butterscotch chips
  • 16 oz package chow mein noodles
Melt chocolate and butterscotch chips together over hot water. Add chow mein noodles and stir until the noodles are well covered. Using a teaspoon, spoon onto a piece of waxed paper and let cool in refrigerator until set.

Recipe Name: Mona's Biscuits

Ingredients and Instructions:

  • 5 cups of flour
  • 5 tsps of baking powder
  • 1 tsp of salt
  • 1 tablespoon of sugar
  • 1/2 cup of shortening
  • 1/2 cup of margarine
  • 1 egg
  • 1 can of canned milk

directions:

Place margarine in large bowl along with shortening, nest. Add 5 cups of flour and blend with large fork until well blended. Add 5 tsps of baking powder and stir well. Place 1 egg in bottom of 1 cup measure and fill the rest of the way with milk and add to flour mixture. Add one more cup of milk and mix well. Roll out on floured surface and use a cup to cut out biscuit shapes. Place on ungreased baking sheet and place in 425 oven for 20 to 25 minutes.

Recipe Name: Cheese Parantha

Ingredients and Instructions:

  • flour ---1 cup,
  • water to make dough
  • pinch of salt
  • processed cheese grated 1/cup
  • boiled and mashed potatoes---- 1 small
  • salt and pepper to taste
  • chilli flakes---- to taste (optional)
  • corriander

METHOD

Add a pinch of salt to floor and make dough. Keep it aside for some time. Mix mashed potatoes with grated cheese. Add salt, pepper, and chilliflakes according to taste. Add corriander. Make small balls of the dough. Take one ball in hand, flatten it, fill the cheese mixture in the center , close the edges so that the mixture does not come out. Then roll out like a chappati( indian bread) with rolling pin. Shallow fry the parantha. Serve hot with pickle or chutneys.
