Here's another one from Laura Parkin. This is the second recipe she sent us this month.

Recipe Name: Chewy Oatmeal Raisin Cookies
Ingredients and Instructions:
- 3 eggs
- 1 cup raisins
- 1 tsp vanilla
- 1 cup brown sugar
- 1 cup white sugar
- 2 1/2 cups flour
- 1 tsp salt
- 1 tsp cinnamon
- 2 cups oats
- 2 tsp baking soda
- 1 cup butter
Method:
- mix eggs, raisins, and vanilla and let sit for one hour.
- combine both sugars and the butter together. add the dry ingredients and
the egg mixture in to the one bowl.
- spoon on to a greased cookie sheet at 350 degree oven for about 8-10 mins just enough for them to set.
Great cookies for the raisin cookie lovers in the family!

Gwen Jones sent us a lasagne recipe you make in a crock pot.

Recipe Name: Crock Pot Lasagna
Ingredients and Instructions:
- 2 lb. ground beef
- 3 oz. pepperoni, sliced into semi-circles
- 1 sm. onion, chopped
- 1 can mushrooms
- 1 can tomatoes or spaghetti sauce
- Oregano
- Garlic salt
- Pepper
- Basil
- 8 oz. lasagna noodles
- 2 eggs
- 1 carton ricotta cheese
- 6 c. grated mozzarella
- 1 pkg. sliced mozzarella cheese (6 slices)
Brown ground beef with onion and pepperoni. Drain grease. Add mushrooms, tomatoes,
tomato paste and spices to taste. Add water. Simmer on low in saucepan or crock pot 4-6 hours (overnight in crock pot on low works best). Mix together eggs and ricotta in separate bowl.
Layer in greased crock pot and back for 2-4 hours.

Suzanne Jones sent us this recipe for Canton chicken wings.

Recipe Name: Canton Chicken Wings
Ingredients and Instructions:
25 chicken wings--cut at joints and discard tips, rinse in cold water. Add to marinade.
Marinate:
- 2 Tbsp. minced garlic
- 1 c. chili sauce
- 1 c. sweet and sour sauce
- 2 Tbsp. soy sauce
- 2 Tbsp. red wine vinegar
- 2-3 tsp. Chinese 5-spice blend
- hot sauce (optional)
Cover. Refigerate for 2 hours. Place on 2 foil lined baking sheets, shaking off excess liquid. Bake 400* for 45 minutes or grill for 25 minutes until crispy. Turn often. Sprinkle with toasted seasame seeds and chopped scallions. Serves 4-6.

Chloe Yates sent us this recipe for Texas Sheet Cake.
Now this recipe has a couple of items that are unclear to us. One is the amount of butter used, she mentions sticks rather than an amount. And a pound of powdered sugar? seems like a lot of sugar. I am assuming this would be icing or confectioners sugar.
We've sent an email to Cloe asking for clarification. If we get it, we'll make corrections if any. If we don't hear from her we may just remove this recipe. If anyone else can clear this up please send us a note here.

Recipe Name: Texas Sheet Cake
Ingredients and Instructions:
- 2 cups sugar
- 2 cups flour
- 1/2 teas. salt
- 1 teas. baking soda
**sift together in a large bowl, set aside
In sauce pan
- 2 sticks butter
- 1 cup water
- 1/4 cup coaco
Bring to boil.
*Add to dry ingredients
Add in
- 2 eggs
- 1/2 cup buttermilk
- 1 teas. vanilla
Bake in jelly roll pan, for 15-20 minutes at 350.
After the cake has been in for 10 minutes,
In the same sauce pan, put in 1 stick butter, 1/4 cup buttermilk, and 1/4 cup coaco. Then remove from heat, add in 1 teas. vanilla, and 1 lbs. powdered sugar. Add to hot cake. Enoy!!

Here is another recipe for cabbage rolls that was sent in anonymously from the US.

Recipe Name: Cabbage Rolls
Ingredients and Instructions:
- 1 head sour cabbage
- 1 pkg ground pork
- 1 pkg medium ground beef
- 2 cloves garlic, chopped fine
- 1 stick celery, chopped fine
- 2 cups cooked rice
- 1 egg
- sage, salt and pepper
- 1 can tomato juice
- ½ jar Diana sauce
- 2 tbsp. Corn Starch
- Mix together ground beef, ground pork, garlic, celery, rice, egg and spices.
- Cut out center of cabbage and put in sink filled with water.
- Cut off the vein of each leaf.
- Place one handful of meat mixture in each cabbage leaf and roll
- Place cabbage rolls in roasting pan with open leaf at top.
- Fill roasting pan with water.
- Cook for 40 minutes on 375° and then 4 hours on 300°.
- When done, take out some cabbage rolls and place in a lid-covered dish
- Mix together tomato juice, Diana sauce, and 3-4 cups of juice from cabbage rolls
- Add in corn starch (mixed with water) and bring to a boil. Allow sauce to thicken slightly.
- Serve over hot cabbage rolls.

Cory Bixler says this is a recipe for a quick and delicious lunch that puts any deli to shame!
Ingredients and Instructions:
- 1 sandwich wedge (french, itallian, any kind of bread you want)
- Tomato sauce
- sliced ham
- sliced turkey (what ever meats you want....this is what I like)
- mozzerlla cheese
So I start by cutting a v shape in the top of the bread ( instead of cutting it in half) I lay the meats in the v. sprinkle on a little oregano, then apply the tomato sauce. (not a ton but a decent amount) cover the top of it with sliced mozzerlla cheese and some more oregano.
If you want it a little more spicy just throw on some red pepper....sooooo goooood!
Throw it in the toaster oven for about 6 mins until cheese is kind of melted and the bread a little toasted and you have a delicious oven baked hoagie from heaven!
