Melanie from the United Kingdom sent us another recipe for chili.

Recipe Name: Mel's Spicy Chili Con Carne

This is a great recipe for Chilli. The use of cinamon gives it a really smooth taste - give it a try! for lots more recipes like this see our website, www.worldlyrecipes.com/

Ingredients:

  • 2 medium onions
  • 1 clove of garlic
  • olive oil
  • 2 level teaspoons chilli powder
  • 2 fresh red chilli, finely chopped
  • 2 heaped teaspoon ground cumin
  • sea salt and freshly milled pepper
  • 1 packet of lean mince
  • 5 sun dried tomatoes that have been soaked
  • 1 tin of tomatoes
  • 6-8 pieces of cinnamon bark
  • 1 tin of kidney beans
Method:

Blitz the onions and garlic in a Magimix food processor until finely chopped, then fry in a little olive oil until soft. Add the chilli powder, fresh chilli, cumin and a little seasoning. Then add the minced meat and continue to cook, stirring until brown. Finely chopped the sun dried and add to the beef with the tin of tomatoes, cinnamon and a cup of water.

Bring to the boil, cover with greaseproof paper and place the lid on top, turn the heat down to a simmer. Cook for 1 hour then add the kidney beans.

This is great served with hot bread or rice.

Recipe Name: Old-Fashioned Beef Stew

Ingredients and Instructions:

  • 1/4 cup vegetable oil
  • 4 lbs. lean, boneless chuck, cut into 2-inch cubes
  • 2 large yellow onions, coarsely chopped
  • 6 large cloves garlic, chopped
  • 6 tablespoons flour salt and pepper
  • 3 cups dry red wine
  • 3 cups beef stock
  • 2 tablespoons tomato paste
  • 4 whole cloves
  • 2 bay leaves
  • 4 sprigs parsley, tied together
  • 1 teaspoon dried thyme
  • 1 tablespoon minced fresh rosemary, leaves only
  • 1 pound small turnips, trimmed and cut into 2-inch pieces
  • 6 large carots, trimmed and cut into 1-inch lengths
  1. heat oil in large stew pot over medium high heat, and then add the beef cubes. cook stirring and turning the meat as necessary for 5 to 10 minutes or until evelny browned.

  2. add the onion and garlic and cook over medium heat, stirring occasionally for about 8 minutes. sprinkle the flour and salt and pepper and stir to coat the meat evenly

  3. add the wine, stock, and tomato paste and stir over high heat until the cooking liquid thickens as it comes to a boil. add the cloves, bay leaves, parsley, thyme, rosemary, and turnips. cover and reduce the heat to low. simmer for 1 hour, occasionally stirring and scraping the bottom of the pot. add the carrots and cook until the meat and carrots are tender, about 20 minutes more. remove the herb sprigs and bay leaves before serving.

Recipe Name: Stuffed Bread

Ingredients and Instructions:

Hollow out the center portion of a loaf of round bread, either from a bakery, or make your own in a round shape. Save carved out portion for dipping.

To make the filling, you will need:

  • 2 (8 oz) blocks of cream cheese, softened;
  • 1 cup Miracle Whip;
  • just under 1 lb of bacon (cooked and broken into little bits);
  • 1 cup grated cheddar;
  • 1 cup raw, finely chopped broccoli.

    Other optional items to add are:

  • 1/4 c chopped green onion,
  • or 1/2 c green or red pepper.
Whip up cream cheese, then blend in mayo. Next add cooked bacon, raw broccoli, and grated cheese, and any other items you may be using. Spoon dip into the center of the hollowed out bread.

Wrap loaf in tin foil and place on cookie sheet in oven at 250 degrees for 2 hours. Serve hot. Use bread bits from center, extra peices of diced bread or rolls, flavored breadsticks, or crackers for dipping.

For variety try using different flavors of bread. Delicious!!

Cathy, from the United States, sent us this recipe for macaronni casserole.

Recipe Name: Spicey Macaronni Casserole

Ingredients and Instructions:

  • 1 Large box of jumbo elbow macaronni
  • 1/2 package of bacon,cut into 1 inch pieces(I think the thicker cut bacon tastes better but can be a bit more costly)
  • 1 can of "Rotel" diced tomatoes with chilies
  • 1 small onion, diced
  • 3 celery stalks, diced
  • 1 medium brick of "Velveeta" cut into one inch blocks
  • 1 jalenpeno pepper, chopped (This is optional as the "Rotel" tomatoes will already make this spicey)
Preheat oven to 375 deg. F.

Cook the macaronni per the instructions on the box. While the macaronni is cooking, cook the bacon until crisp in a large skillet. Be careful not to burn the grease.

Spoon out the bacon pieces onto a plate and alow to drain on a paper towel. Add the chopped onions, celery, and jalapeno to the grease left in the pan and saute for about 5 minutes or until the onion becomes translucent. (Again the jalapeno is optional, adding this extra jalapeno will create a very spicey dish. I don't add it myself because my children and husband cannot eat it this way.)

Add the "Rotel" tomatoes to the celery and onions and let simmer for another 5 minutes or so.

Once the macaronni is cooked, drain, rinse and place in a large baking dish. (If I'm taking this to a potluck I usually bake it in a large disposable lasagna pan) Pour the onion, celery, and tomato mixture over the noodles and fold together until evenly distributed. Then add the bacon pieces and fold them in until evenly distributed.

Taking care to get the cheese in every nook and cranny push the chunks into the casserole. I just use my fingers but if the mixture is too hot pushing it in with a spoon or the like works too. Once you have all the cheese pushed in bake uncovered for 25 minutes or until the cheese is thouroghly melted.

Ingredients and Instructions:

  • 1 can of herbs chopped tomates
  • 1 small can of pizza sauce
  • 1 each of red green and yellow peppers chopped
  • 1/4 cup of fresh chopped parsley
  • 1 tsp of fresh garlic
  • 1 small onion
  • 2 cups of beef broth
Saute veggies and add to liquid and boil approx. 45 min and serve with small amount of cheese of your choice on top and nachoes on the side.

Recipe Name: Apple Crumble

Ingredients and Instructions:

  • 4 granny smith apples
  • 2 cups flour
  • 2 cups sugar
  • 1 stick margarine
  • can of jellied cranberry sauce
Peel and cut up apples. Combine with jelly sauce. Lay in a glass pyrex dish. Then, in a separate bowl, combine flour, sugar and margarine and crumble with hands until mix is crumbly. Pour on top of apple mix and bake 350 degrees for about an hour.

Recipe Name: Chicken Curry with Cashews

Ingredients and Instructions:

  • 1/4 cup unsalted butter
  • 2 medium onions, finely chopped (2 cups)
  • 2 large garlic cloves, finely chopped
  • 1 tablespoon finely chopped peeled fresh ginger
  • 3 tablespoons curry powder
  • 2 teaspoons salt
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper
  • 6 half breast of chicken, cut into cubes
  • 1 (14.5-oz) can diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 3/4 cup cashews (1/4 lb)
  • 3/4 cup plain whole-milk yogurt
Begin cooking rice in the rice cooker. Place 6 cups of rice to 9 cups of water in the cooker. Set it and forget it.

Heat butter in a wide heavy pot over moderately low heat until foam subsides, then cook onions, garlic, and ginger, stirring, until softened, about 5 minutes. Add curry powder, salt, cumin, and cayenne and cook, stirring, 2 minutes. Add chicken and cook, stirring to coat, 3 minutes. Add tomatoes, including juice, and cilantro and bring to a simmer, then cover and simmer gently, stirring occasionally, until chicken is cooked through, about 40 minutes. Portion cooked rice on to plates and pour curry on top. Garnish with chopped fresh Cilantro.

Recipe Name: Heavenly Lemon Cake

Ingredients and Instructions: - serves 8

Preparation - 15 minutes, Cooking time - 30 minutes

  • 1/2 cup and 1 tbsp butter
  • 3/4 cup sugar
  • 1 1/2 tbsp grated lemon rind (2 lemons)
  • 2 eggs, beaten
  • 1/2 cup sour cream
  • 1/2 cup lemon juice
  • 3 cups self-rising flour
Preheat the oven to 350 F. Beat together the butter, sugar, and lemon rind, using an electric whisk, until smooth and light. Beat in the eggs, sour cream, and lemon juice.

Sift over the flour and carefully fold in with a metal spoon. Spoon into a greased and loned 8 inch cake pan and bake for 40 minutes until firm and springy to the touch. Allow to cool slightly before transferring to a wire rack. Slice and serve warm with cream as a dessert, or cool completely and serve with a nice cup of tea.

Variation: Make this scrumptious cake a little more child-friendly by topping it with a simple frosting: sweeten 7 oz soft cheese with 2 tbsp of sifted powdered sugar, adding a little milk if the mixture is too stiff.

Recipe Name: Crab Meltaways

Ingredients and Instructions:

  • 1/2 lb crab meat
  • 1 stick butter
  • 1 jar Old English Sharp cheddar cheese
  • 2 T mayonnaise
  • 1/2 tsp seasoned salt
  • 1/2 tsp garlic salt
  • 6 whole english muffins

Mix all ingredients together. Split muffins, spread with mixture. Cut each muffin into quarters. Freeze or refrigerate until just before serving. Place under broiler until lightly browned.

Makes 24 tidbits.
